Nutella-Swirled Chocolate Chunk Peanut Butter Blondies {no butter, flourless, gluten-free}

Well that title is certainly a mouthful. But guess what? I wouldn’t have it any other way.

I made you another delicious flourless treat without any weird ingredients. This time it includes two of my absolute favorite things: peanut butter AND nutella. OH BABY. And if you want to get really crazy, you can add bananas into that mix! But we’ll get to the various adaptations behind these bars in a bit. First I’d like to share some VERY exciting news with all of you!

I’ve taken a new job!

I will be joining General Mills as a full-time employee managing social for Gold Medal Flour and Bisquick. I’m completely thrilled as I have been working on and off with General Mills for the past two years in social media, thus it was only natural for me to move into a full-time role.

So what does this mean for Ambitious Kitchen?

You probably won’t notice a difference at all, other than my posts may be a little sporadic as I transition into my new role. Naturally you might hear me mention cereal and yogurt a bit more often (because I will be surrounded by it at work), but other than that I will continue to stay true to what I love: creating unique, (mostly) healthy recipes and sharing my passion for healthy living with all of you.

Dark Chocolate, Raspberry, and Brie Grilled Cheese

How was your weekend?

Of course… mine was delicious! I took the day off Friday to spend time with my mom; we had a fun lunch at Panera and got pedis. Then I spent the better part of the afternoon getting organized in preparation for a move. I have come to the conclusion that will never like packing things or getting rid of clothes.

On Saturday I had a fun date night at Borough in Minneapolis (more to come on that another time).

Yesterday was Mother’s Day; my family celebrated with a light brunch and they also forced me to make my best apple crisp. Afterwards I got in a beautiful 6 mile run, then dabbled in the kitchen a bit with some cooking. Some days there’s nothing better than doing exactly what your passionate about, you know? Grocery store runs, organizing my recipes, and photographing the end result always makes me feel a bit accomplished.

Best Ever Vegan Avocado Chocolate Birthday Cake with Vegan Chocolate Ganache

Work. Work. Work. I’ve been sooooooooo busy.

All of it makes me crave cake, which is actually quite disappointing considering I put myself on a baking restriction. I mean the whole point of it was to learn how to control myself around things that smell like heaven. Whattttttttt.

But come on! You and I both knew that sort of thing wouldn’t last long. I mean did I really expect myself to NOT throw flour around my kitchen for an entire week? I don’t think that’s even possible.

The other day I baked my incredible black bean avocado brownies for my Godson, then pretty much devoured half the pan. Who could blame me? Those things are ridiculously fudgy and packed with healthy things. WIN!

Totally dramatic… I’m aware.

Dark Chocolate Covered Coconut Almond Granola Bars

I bet you’re hungry. I mean, it’s been a week since I’ve given you a recipe!

I’m not back from vacation just yet so I’m going to keep this short and sweet; I have to enjoy my last day in the sunshine!

Before I go, we must discuss these granola bars. They’re simple, delicious, and full of good-for-you ingredients and healthy fats to keep you satisfied. Plus they are incredibly easy to make!

First we toast the coconut, oats, and almonds in the oven.

Then simply mix honey, almond butter, a little coconut oil, vanilla and cinnamon in a saucepan to heat thoroughly. The wet ingredients are then added to the dry mixture and then tossed to combine. Easy!

Peanut Butter Oatmeal Chocolate Chip Cookies {flourless, no butter}

Oh hey. I noticed that it’s been a while since I’ve given you a cookie recipe. Please forgive me as I made you these ridiculously good-looking, chewy, thick, fat peanut butter oatmeal chocolate chip cookies. Without flour or butter.

Wait… WHAT? I swear this isn’t a joke.

First I need to confess that I LOVE LOVE LOVE peanut butter. In fact, I think if I was allergic I’d probably still eat it. I’m definitely one of those people who feels like it completes me in some way. Some of you may feel this way about Nutella and I totally get it; nut butters are creamy, addictive and awesome spread on just about anything. I usually do it animal-style aka straight out of the jar with a spoon.

Hmmmm I think I’m displaying signs of an addict. Are there any nut butter support groups out there?

Pinto Bean Chicken Chili

 

Every now and then I love a little real-talk blogging. Today is one of those days.

The past year has been full of life-altering changes for me. I’ve shed many layers from my life…. and can I just admit that it’s all been incredibly difficult?! I’ve started my own business, traveled at least a week out of every month, lived in three states, and have literally been pulling my hair out trying to figure out where this is all leading to!

So what does this translate into? Basically working insane hours and jeopardizing A LOT. Honestly it’s been a complete struggle. I’m sure it’s something you might be able to relate to: failure, disappointments, and well… whatever life throws at you. Of course, I’m a huge believer that everything happens for a reason. My passion for success and a career in food pushes me every single day to keep pursuing my dream no matter how many times I fail. And trust me, I fail more than you know! My list of unsuccessful ventures will always be longer anything I accomplish; it will be for all of us. However, these failures push you to become better and to learn.

In a sense, I feel as though I’m in the middle of a transformation. I’m trusting my intuition and regardless of how difficult it becomes or what disappointments I find myself in, I’m both blessed and thankful to be on this journey.

So my question to you, is what pushes you to be the best you can be? What drives you to be better than you were yesterday?

I’m just a twenty-four year old girl who is literally obsessed with food, styling, photography and the inspiration I find in every day life. I’m not here to pretend I’m perfect in any way, because I’m not. I’m just explicitly in love with sharing my passion with you.

Oh sorry, that’s a bit obvious and this is getting preachy. Excuse me, let’s get to the FOOD!

Fudgy Peanut Butter Swirl Brownies with Toffee + Sea Salt

Out of all the brownies I’ve made, these are my absolute favorite.

Like the best evaaaaaaaaaaaaaa.

A bit dramatic but what did you expect? I love chocolate.

A mix between fudgy and a tiny bit cakey, these brownies are incredibly rich, decadent, and downright addicting.

I thought I’d share them with you, because this is as close to a Valentine’s Day dessert that I’ll make. Trust me, it’s got all the chocolate love you need.
