Juicy gluten free peach crisp with a crunchy pecan oat topping and a drizzle of the easiest homemade dairy free caramel. You’re going to LOVE this summertime dessert. Don’t forget the ice cream!

Hope the weekend is treating you well and you’re ready for some down time (and perhaps a little baking) the rest of the day.

If there’s one thing better than hanging out all day on the patio during the summer with a few glasses of white wine and a charcuterie board in front of your face, it’s definitely anything baked with peaches.

Delicious and easy 30 minute dinner for two: Chili Maple Lime Salmon Bowls with amazing mango & edamame mixed with sweet forbidden rice.

Lately, we’ve been loving salmon. It’s the BEST easy healthy meal out there, am I right?

Just the other day, I stepped into Whole Foods after a class at Crosstown Fitness. Usually I head there after my workout. Normally I shop at Trader Joe’s because it’s much cheaper, but Whole Foods happens to be incredibly convenient when I need last minute ingredients. Plus sometimes they have pretty good deals on produce (all the berries right now!).

Paleo and gluten free turkey burger sliders on sweet potato buns. An easy bite sized recipe or appetizer!

Did you know the official first day of summer was LAST week? I don’t know about you, but it has felt like summer here in Chicago for about a month now. I’ve been absolutely loving the heat, the longer days, and the chance to hang out on the patio with Tony.

We also have a bird feeder, so Milly likes to come plop her belly out and watch the birds too.

Tofu, Cauliflower, sweet potatoes, bell pepper, garlic, turmeric, ginger and simmer in in this coconut curry dish made in partnership with Nasoya Tofu. Vegan and gluten free too!

Over the past year I’ve become OBSESSED with curry flavors. Don’t ask this Puerto Rican girl why, but I think it’s because there is a Thai neighborhood just up the block. The exotic spices are aromatic and wander in and out of the streets. In a way, the smells are inviting me to come in a try something I’ve never had before, which is often what Tony and I try to do when we go out.

Lately it’s been all about that curry life. I love slurping up a big bowl of coconut curry from our local vietnamese restaurant Tank Noodle, or trying a spicy version over rice; not only is it comforting, but I feel like there’s something really healing about a good curry.

Baked coconut donuts with a sweet berry glaze. Easy to make and perfect for patriotic holidays like the 4th of July. I call these the All American Donuts.

Did you guys see my Instagram stories this weekend? I FINALLY got around to creating my little patio garden. I picked up a few plants on Saturday afternoon after my workout then spent the rest of the afternoon planting gorgeous arrangements on my deck before a storm rolled through. Guys, I’m not kidding when I say I had such a great time.

I still want to plant a few herbs and possibly a tomato plant, but we’ll get there eventually.

Looking for a beautiful grain free dessert to make for summer? Try this gorgeous almond flour strawberry shortcake cake made with a mix of almond & coconut flour and Almond Breeze almondmilk!

My Godparents have a wonderful red quaint little cabin overlooking a huge lake in northern Minnesota. There’s a tiny plot of sand in the back and two docks that extend to look out to where people go boating and jet-skiing. Many of my favorite memories as a child were there, including most of the summertime holidays like Memorial Day and 4th of July.

The best brownies I’ve ever eaten: tahini brownies. No butter, flour, oil or refined sugar. These paleo, gluten free and grain free brownies are simply incredible with REAL, wholesome ingredients!

While I was in Israel last November, I consumed the most tahini I had ever had in my life. The hummus (or often pronounced WHOOO-MUH-S) was one of the best things I’d ever eaten. Granted I have never been to Greece but this stuff was creamy, rich, and with a slight bitter tang from the freshly ground tahini.

After eating tahini for over a week with various dishes like roasted pumpkin, bread, meatballs and more, I became addicted. And even more so when I found out that Trader Joe’s sold tahini (aka sesame seed butter) for less than $5.

*places all TJ’s tahini in cart and runs*
