When I was a wee little nugget aka a little lady, my favorite kind of chicken was chicken drumsticks. My mom grilled and baked them all the time for us, usually slightly coated or sometimes in zippy Puerto Rican spices with creamy beans and Spanish rice on the side. The chicken was incredibly juicy, so much more so than regular chicken breasts.

I’m sitting here going over our wedding playlist, wondering what the big day will be like when it actually comes. Will I be anxious? Nervous? Stressed? Carefree? Deliriously happy? All that I know is that I’m looking forward the day we say I do, but for reasons other than just having the wedding.

To me, it’s not about the big day — that’s for everyone else in our lives. What will come on our wedding day for us, is that we acknowledge that we’re finally in it together, forever. That we’ve sealed our souls as best friends, lovers and partners in life. That we close one eye to our faults, we promise to never give up and to always say I love you, even when life gets hard — which it will. Life is funny that way sometimes, wouldn’t you agree?

How was your weekend? We had a lovely one over here with beautiful vibrant blue skies and 60 degree temps. Saturday night was even nice enough for us to grill out with homemade cumin turkey burgers, roasted peppers and plenty of wine to fill our glasses.

Last week was an entirely different story though. It was cold, rainy and I could never seem to get warm enough even when I was wrapped up in a fuzzy blanket.

The cure for having the chills? A comforting bowl of delicious soup simmering away on the stove top and devoured with your favorite crackers on top.

Who else is as much of an avocado lover as I am? *Everyone raises their hand*

Avocado toast has been a love of mine for as long as I remember, and even before I remember it being trendy to put on toast. In fact, my mom used to make homemade refried bean and cheese burritos for us with slice avocado on the side and hot sauce. The creaminess of avocado is as nostalgic to me as a big bowl of mac and cheese. Simply put, I’m in love with avocados and always will be.

Tuna quinoa salad packed with protein, fresh spring veggies and a green goddess avocado dressing. Delicious and so easy to make!

My Dad used to make the BEST tuna pasta salad on the planet. It had tiny little circular pasta, fresh peas, lots of tuna and wayyy too much mayo. Truth be told, I loved it from the bottom of my heart.

Dad even made the salad for my high school graduation party and I couldn’t resist going back for serving after serving. It was a simple memory, but one that will stay with me forever.
