Easy, flavorful tuna wraps drizzled with light chipotle Greek yogurt ranch dressing. They’re the perfect summertime lunch and packed with delicious farmer’s market veggies.

Say hello to my new favorite lunch because I couldn’t believe how much I LOVED it. I’ve been on a pretty consistent, early morning workout routine as of late, which means by the time I’m thinking about lunch (as early as 10:30AM for Abra and I…) I want something quick, filling, and of course, delish.

Healthy turkey sloppy joes with an easy homemade sauce made with ingredients you probably already have in your cupboard. Everyone loves this recipe because it can also be made in the slow cooker and doubled… or tripled for a crowd.

I went through a phase in high school where I was constantly asking my beautiful mama to make me sloppy joes for dinner.

Mom, forgive me but those things were gooooodd.

I’ve decided that one of the things I love most about living in Chicago is that you get to experience such greenery in the spring and summer. It’s a little surprise that hits you with joy after wind whipping and snow for a good 6 months.

Now that summer is here, the outside of our condo is completely covered in beautiful green vines. I love opening my windows each morning and seeing the birds hang out amongst the vines, chirping as early at 4am.

Roasted sweet potato arugula salad is a perfect lunch or appetizer. Topped with a light honey mustard yogurt dressing with a hint of gorgeous turmeric color.

How are we all feeling after the long weekend? Relaxed and rejuvenated?

Ready for another 3 day weekend? *me too*

Yesterday I went on a 3 mile run because I woke up with a massive wine hangover and needed some oxygen pumped to my brain. What? Just being honest over here… the best way to cure a hangover is a little bit of exercise.

Juicy grilled jerk chicken drumsticks with a delicious Caribbean Rice & sweet mango salsa. The perfect healthy grilling recipe for summertime!

When I was a wee little nugget aka a little lady, my favorite kind of chicken was chicken drumsticks. My mom grilled and baked them all the time for us, usually slightly coated or sometimes in zippy Puerto Rican spices with creamy beans and Spanish rice on the side. The chicken was incredibly juicy, so much more so than regular chicken breasts.

Now I wonder why I don’t eat it more often.

Looking for a beautiful grain free dessert to make for summer? Try this gorgeous almond flour strawberry shortcake cake made with a mix of almond & coconut flour and Almond Breeze almondmilk!

My Godparents have a wonderful red quaint little cabin overlooking a huge lake in northern Minnesota. There’s a tiny plot of sand in the back and two docks that extend to look out to where people go boating and jet-skiing. Many of my favorite memories as a child were there, including most of the summertime holidays like Memorial Day and 4th of July.

The best brownies I’ve ever eaten: tahini brownies. No butter, flour, oil or refined sugar. These paleo, gluten free and grain free brownies are simply incredible with REAL, wholesome ingredients!

While I was in Israel last November, I consumed the most tahini I had ever had in my life. The hummus (or often pronounced WHOOO-MUH-S) was one of the best things I’d ever eaten. Granted I have never been to Greece but this stuff was creamy, rich, and with a slight bitter tang from the freshly ground tahini.

After eating tahini for over a week with various dishes like roasted pumpkin, bread, meatballs and more, I became addicted. And even more so when I found out that Trader Joe’s sold tahini (aka sesame seed butter) for less than $5.

*places all TJ’s tahini in cart and runs*
