Truth be told I’ve never considered myself to be a cheesecake lovah. I’m more into pies, cookies, or basically anything else that’s sweet.
But when my friend Gina sent me her Skinnytaste Fast and Slow Cookbook a few months ago, I knew I wanted to share these easy, mini no bake cheesecakes with you. In Gina’s cookbook, she calls them shooters and serves them in adorable shot glasses.
Peanut butter protein bars made with simple, healthy ingredients like oats, peanut butter, chia seed, coconut and protein powder. Drizzled with chocolate and a little sea salt. Truly the ultimate protein bar because you can easily make it your own!
When I was first learning how to refuel my body after a workout, I would grab whatever snack was available in the gym’s vending machine. At the time, no one told me that reading the ingredients was very important; it was 2009, and everyone was still on the low-fat diet craze. Clearly the gym I was a member of didn’t know any better, or just didn’t care.
I remembering gobbling down the bars with weird ingredients: crunchy rice, fake fiber and sugar, and most likely a terrible protein source. Shortly after the bars with insane amounts of fiber came on the scene; they were filled with fiber that isn’t even found in nature, but rather made in a lab. Those sketchy mofos.

These nut free granola bars came to fruition from your requests on my previous reader survey. While scrolling through your comments, I noticed that a few of you had allergies to nuts or you were baking for little ones who couldn’t have nut containing items in their lunchboxes.

I got back from Nantucket last night and all I wanted to do was prepare a few healthy meals for the week. Personally I’ve found that the trick to maintaining a successful weight loss is to be prepared when it comes to food; always easier said than done though, right?

Happy Monday, friends! How was your weekend? Tony and I chilled hard — it was something we had been craving due to our busy schedules with virtually no down time. Now that certainly doesn’t mean our weekend was uneventful (we still had things to talk about regarding the house), but we were able to get donuts at Dinkel’s, shop at Paulina’s meat market, make Jamaican Jerk chicken kabobs, walk 20,000 steps and clean our apartment.
Not to mention that we’ve started the process of getting rid of things. Including all the various food ingredients I have sitting in my cupboard.
Hello and welcome to stressville. Our house offer was accepted this weekend and we’re in the midst of coordinating inspections, lawyer fees and contracts.
