If you lived with me, you’d know that I almost always have to end each meal (or the night) with a little something sweet. I have a feeling that we’re very similar in our fondness for better-for-you treats, am I right?!

All I know is that I can’t feel confident and slam down an extra large blizzard or cherry dipped cone all the time.

I’m also sensing that I might be craving DQ here. Haven’t had a Dilly in wayyyy too long.

Almond meal banana muffins!!! Yes, we’ll get to the recipe, but first, hi and how was your weekend?

Here in Chicago it was a beautiful 60 degrees (in February!). Of course, I took full advantage of the weekend by taking a break from work and taxes. On Friday night we stayed in, made cookies and watched the new(er) Steve Jobs movie. I full blown LOVED it and thought Michael Fassbender was fantastic. If you haven’t seen it yet, you must!

Stuffed vegetables never seem to disappoint me. They’re simple to make, easily nutritious and are a wonderful way to use up excess produce in your fridge. These stuffed eggplant boats are no exception and come from my good friend Julie Wampler of Table for Two and now author of Dinner for Two, a cookbook devoted to meals for two people. Genius idea, right?

Yesterday Tony and I went out for a day date and finally saw The Revenant with my main squeeze Leo. Have you seen it? If not, it’s definitely worth watching in theatres!

When we go to the movies, I find myself always bringing healthier snacks. That’s probably not much of a surprise though. Every once in awhile we will splurge on the movie popcorn, but usually I have a purse packed with my favorite coconut oil and sea salt popcorn plus a few of these paleo chocolate chip cookies. Guys, they are RIDICULOUSLY GOOD. Think addicting, thick, chewy and full of melted dark chocolate puddles.

The beginning of January hit a few weeks ago and this smoothie was in full rotation as my breakfast of choice. To be honest, I enjoy smoothies at all times of the day during each season. Not only are smoothies delicious, but they give you the ability to pack a lot of nutrition into one glass. And that’s something I love!

Normally I start each blog post with some sort of little story about life and what I’ve been up to lately. Today I just want to bring you a recipe for paleo banana bread because frankly, it’s just awesome.

Happy New Year, friends! Today marks my last day soaking up the Florida sunshine! Can’t wait to tell you all about it soon.

In the meantime, I have been waiting to bring you these AMAZING peanut butter protein balls (that taste like a a mix between cookie dough and a peanut butter cup) since late October. The timing just never felt right with all of the holiday goodies. I’m sure you’re more than ready for them now. Am I right?

Right now I’m on a plane to Utah, heading to Solitude Resort in Park City for a beautiful ski trip. It’s funny, I don’t remember the last time I went skiing. Probably 7th grade? I don’t remember being too terrible so maybe I’ll pick it back up again. Or I’ll just fall on my ass and enjoy a really good workout. Either way, it’s going to be a blast.

And honestly, I’m so excited for the rest of December! Lots of cookie baking, a vacation to Florida and Minnesota for Christmas.

I had never experienced homemade cranberry sauce until a few years ago. The only version that sat on our non-traditional Thanksgiving table was the jellied version from OceanSpray.

For goodness sake, most of the time we were eating enchiladas and Spanish rice during the holidays; the cranberry sauce was only there because Mom loved it.
