Tuna quinoa salad packed with protein, fresh spring veggies and a green goddess avocado dressing. Delicious and so easy to make!

My Dad used to make the BEST tuna pasta salad on the planet. It had tiny little circular pasta, fresh peas, lots of tuna and wayyy too much mayo. Truth be told, I loved it from the bottom of my heart.

Dad even made the salad for my high school graduation party and I couldn’t resist going back for serving after serving. It was a simple memory, but one that will stay with me forever.

Strawberry Avocado Salad packed with heart-healthy fats, creamy goat cheese, toasted almonds and a light citrus poppyseed dressing. Like Panera’s salad — but so much better! 

I’m headed home from a lovely trip to Arizona and the warm(er) weather. Tony and I had such a wonderful time in majestic Sedona — from the incredible hiking up to Devil’s Canyon to the midnight star gazing, it was everything we wanted. Thank you for all of your recommendations, I so appreciated them.

Every time I get back from traveling for awhile, I crave vibrant fruits and veggies to fill my plate. Because let’s face the facts: there’s always a 100% chance that my belly’s been full of a few too many carbs and on-the-go snacks that aren’t always the best choice (helloooooo fro yo topped with frosted animal crackers!).

Kale waldorf salad with chopped chicken breast, avocado, goat cheese, tart cranberries, apples and crunchy toasted walnuts. Tossed in an easy light balsamic vinaigrette for the most delicious healthy lunch or dinner.

Of course my first recipe of 2017 is bound to be a salad. Hashtag #typical?

To be completely honest with you, I don’t eat as many salads as I used to. I remember when I basically lived at the Whole Foods salad bar for lunch and dinner. My memories of the salad bar are fond; the cajun roasted sweet potatoes, sesame broccoli and detox kale salad tasted like pure gold after a workout.

Butternut squash and kale salad that’s both beautiful and flavorful! Tossed with pomegranate, toasted sliced almonds, goat cheese and a light dressing!

Well, here we are! It is officially fall.

I woke up the other morning and noticed a handful of golden yellow leaves falling to the ground. Do you remember collecting those when you were younger? I do. Anyway, the morning air has been brisk and wonderful. I’ve been opening our sunroom windows and letting in the afternoon breeze while I work on editing photo for the blog.

How was your weekend? We moved into our new place and I’m freaking exhausted. This girl is in need of a mini vacation.

Imagine enjoying this for lunch: a big healthy buddha bowl with a slightly sweet mango coconut brown rice, sesame roasted sweet potatoes & broccoli, and topped off with an orange sesame almond butter dressing. Yeahhhhh, you’re so down.

So, we’re in the middle of packing up all of our dishes and just realized I have nothing left to eat off of. As in I literally scarfed down yesterday’s lunch with my hands. When you’re in the privacy of your own home, what does hot sauce all over your hands matter anyway?

Oh hi Monday, you’re here again. Do you have your cup of joe? Maybe paired with a big bowl of steaming hot oatmeal with blueberries for breakfast? Me too.

I got back from Nantucket last night and all I wanted to do was prepare a few healthy meals for the week. Personally I’ve found that the trick to maintaining a successful weight loss is to be prepared when it comes to food; always easier said than done though, right?

When I was little my Dad used to throw the ultimate backyard BBQs. From sweet corn on the cob with honey butter and salt to his famous picnic salads, Dad was the man who knew how to make you smile with a Dixie paper plate full of your favorite colorful summer food. I remember sitting on checkered picnic blankets with my cousins as we held juicy watermelon wedges and patiently waited for the rest of our meal.

I’m a firm believer that every BBQ or party should have at least a few healthy choices available for guests to nosh on. No one wants to show up and only be served mayo-loaded potato salad, overly salted potato chips, hot dogs, cake from the grocery store and cantaloupe that tastes like it’s out of a GMO factory.

Okay, maybe those are only the parties I’ve been to. Whomp whomp.

Hi Spring. So nice of you to finally arrive and warm my bones.

When you’re from the Midwest, you know that there’s a huge discrepancy from when the calendar says it’s officially spring to when it actually gets warm out. Some years it just goes from Winter to Summer in the span of a week.

This Spring has been kind though, it’s been warm and beautiful here in Chicago for a few weeks now. In fact, I just started running outside again and have already made it up to 5 miles. Another plus is that I beat my average pace from Fall, which is AWESOME. Unfortunately, ever since I had to quit yoga because of my neck and back issues, I find my hip flexors and butt to be extremely tight after running. I do roll both out, but clearly need to find other stretches to help me. Suggestions welcome and appreciated!
