If I ever move anywhere else in the United States, it would be to California. Lately I’ve been thinking about the days when I used to live in Hermosa Beach. The weather was indescribably beautiful. The neon pink and orange sunsets were astounding. The wines were bold and native. The hiking trails were gruesome (in a good way).

Every year these memories come up as we approach cooler temperatures. I can already feel it happening and I’m just not ready yet. How about you?

While I enjoy all fruit, I never purchase cherries too often because I always have felt limited as to what I could do with them. Usually the only thing I made was a basic fresh cherry pie or an apple cherry crisp.

But then I realized that I ain’t no basic chick and made this bright salad with all of the good things in life. Hells yes.

Each and every Summer since I was a babes, I’ve gone to a family cabin in Northern Minnesota to celebrate the 4th of July. Honestly, it’s one of my favorite holidays because we all get together and celebrate with ridiculous little traditions.

It all starts early in the morning when my Godmother (my second Mom) puts an old school Shaggy CD on full blast. When we were little, we hated his music with a passion. These days, it makes us laugh and we stumble out of our rooms cracking up and shaking our heads.

Ohhhh ohhhhh ohhhhh! I made you a loaded salad. I mean really loaded. Magically so.

You guys know me well by now. If there’s a salad then there’s most likely kale in it… but then I went to Trader Joe’s (of course) and saw bag of organic spinach on the shelf. I mean, really let’s not forget about the first superfood that ever was. Before kale was this huge thing that people tried to make chips out of, spinach was the star. And so I decided to throw it back to 2008.

There’s something about summer that makes chopped salads everything you could possibly want. So many fruits and veggies in delicious little chunky bites waiting to be demolished. That’s how I think about salads anyway. Seriously can people please stop bringing those mayo-laden potato salads to potlucks, please? Most of the time I can’t even recognize if there are potatoes actually in the salad because I’m blinded by all that white weirdness.

It’s St. Patrick’s Day… and I’m bringing you a recipe for Greek salad. Sorry for being a bad blogger. I just can’t seem to get down with recipes spot on for holidays. Something to work on, I guess.

Moving on…

Do you have a favorite type of food? Over the years mine has varied but mostly always stuck with Spanish cuisine because of the bold, spicy flavors. More recently, I’ve had a major crush on Greek and/or Mediterranean food of any sort. The feta! The olives! The pita bread! Oh, and tzatziki dip? YESSSS.

Oh hey, it’s me. And apparently I’m the only blogger around who hasn’t made an extensive list of EVERYTHING you need to make for Thanksgiving. Perhaps it’s because I’ve never been that into the traditional Thanksgiving meal up until a few years ago; before that my Thanksgiving consisted of Mom’s stacked enchiladas, posole, spanish rice and empanadas.

The only thing traditional we had was pumpkin pie (because I requested it of course). And who could get sick of those kind of leftovers? Not me.

Last week I spent some time up in Chicago searching for an apartment. And after checking out about 15 different places, I finally found one that I absolutely adore! It’s super vintage and will fit all of my furniture which I’m pumped about. But do you want to know the absolute BEST part about my new place? It has a DISHWASHER. Hallelujah!

I’ve spent the past year washing every single dish and it was literally my nightmare. Also, this apartment building allows me to have cats, which OMG YES I’m going to be a cat lady and I can’t freaking waitttttt. I keep begging Tony to bring me to the animal humane society just so I can’t pet all the sweet little animals.

I’ve been super lazy about packing my lunches lately. Probably because they have a Chipotle type line at the work where I basically get a chicken taco salad every single day. ALRIGHT FINE, I’ll admit that I totally get the salad because it comes with crunchy, salty tortilla chips and loads of guac.

I feel as though I’ve been waiting forever for humid summer nights. And my goodness are they here. Smoky BBQ meat, fresh juicy watermelon, and frozen yogurt has taken over my life and I couldn’t be more ecstatic about it.

As you’ve probably seen via my Instagram, I’ve been taking a few summer trips. Along the way, I find myself eating out and enjoying food relative to each state’s culture. Often times, I’ll order some sort of chopped salad; each one being more unique than the last. In New Mexico, I enjoyed a BBQ Chicken salad with green chile, chickpeas, jicama, mango, red pepper and an incredible cumin-lime dressing. In Minnesota, I often munch on my Healthy Chicken Chickpea Chopped salad and mix up the dressings. When in North Carolina visiting Tony, I gravitate to greek salads with red potatoes, grilled onions, olives, and loads of feta cheese.

Cranberry Pecan Quinoa Salad with Honey-Orange Dressing - light, lovely and so delicious!

I’ve been getting back into vinyassa yoga lately. Most of the time I do yoga sculpt classes with weights, but recently I’ve needed some deep stretching and some major stress relief. The mind-body connection that yoga brings me is often times my favorite part of the class; I’m more self-aware, compassionate, and thoughtful with each class. I’ve also noticed that my anxiety diminishes.

The other day my instructor was talking about how you have to be brave in order to become your true self. How you have to go beyond what you think you’re capable of if you want to make something happen. Take a chance on something or someone.

Little conversations like those push me to be better. I’m happy to have the ability to to make choices, change my future and create opportunities that I would have never thought possible. Thus on my journey to having a clear mind with less stress, I’m also focusing on having a healthy body. Eating clean, preparing my meals, and taking care of myself is so important.

This past weekend I made a big batch of this summery salad (with fall flavors?) My mom came over to help taste test, and she absolutely loved it. We enjoyed it cold served with some greek yogurt.

This salad was inspired by my favorite little meal at Whole Foods made with couscous. Every time I’m there I search for it.
