Tuna quinoa salad packed with protein, fresh spring veggies and a green goddess avocado dressing. Delicious and so easy to make!

My Dad used to make the BEST tuna pasta salad on the planet. It had tiny little circular pasta, fresh peas, lots of tuna and wayyy too much mayo. Truth be told, I loved it from the bottom of my heart.

Dad even made the salad for my high school graduation party and I couldn’t resist going back for serving after serving. It was a simple memory, but one that will stay with me forever.

A cozy healthy butternut squash sweet potato casserole sweetened with pure maple syrup. Topped with a crunchy almond flour oat topping! Absolutely amazing for Thanksgiving!

Happy Monday! I’ve been observing my life from the outside lately and watching it fly by faster than it ever has. I can’t get to half of the emails in my inbox and barely have time to figure out how we’re decorating our family room. We still don’t have a couch and our bedroom still isn’t all the way complete. My hope is that Thanksgiving will bring some quiet, relaxing time with a cup of tea and good food to fill my belly. (And that I’ll get to respond to some emails from you all, of course!)

Rainbow veggies roasted to perfection with garlic, olive oil and turmeric, then drizzled with a sweet and spicy chipotle honey yogurt dressing. Throw in some quinoa or enjoy with grilled chicken or salmon as a main dish!

Let’s talk about this whole Thanksgiving situation coming up. What are you making and what are your family recipe staples? I want to know because I’m always looking to add something new and exciting to the menu.

This year I plan on making my sweet potato casserole, cranberry orange sauce, some sort of cherry pie (OMG YES), buttery biscuits, a spinach pear salad and roasted butternut squash. Last year we tried Heartbeet Kitchen’s honey carrots, which were SO INSANELY GOOD I nearly ate them all myself.

I think I have an underlying love hate relationship with pasta. I’ll go week, or sometimes even months (!!!)  without having it, and then for some reason I’ll dream up some good recipe or Tony will request an Italian meal and then we’re off on a pasta eating binge for days.

How was your weekend? We moved into our new place and I’m freaking exhausted. This girl is in need of a mini vacation.

Imagine enjoying this for lunch: a big healthy buddha bowl with a slightly sweet mango coconut brown rice, sesame roasted sweet potatoes & broccoli, and topped off with an orange sesame almond butter dressing. Yeahhhhh, you’re so down.

So, we’re in the middle of packing up all of our dishes and just realized I have nothing left to eat off of. As in I literally scarfed down yesterday’s lunch with my hands. When you’re in the privacy of your own home, what does hot sauce all over your hands matter anyway?

Who here loves chips? *Everyone raises their hand*

Seriously though, everyone loves a good crunchy, perfectly salted tortilla chip. They easily complete sandwiches, make turkey chili 10x better than it already is and just so happen to be the perfect companion to guacamole.

When I was growing up, there were several ‘staple’ grocery items my Mom always purchased: sesame bagels with salted butter, crunchy carrots with hummus, leafy greens, and… tortilla chips! She always had a bag of chips open and ready to be devoured. #ChipAddictSince1993

I have an endless supply of recipe ideas sitting in my drafts for you at all times. Like these peppers, who have been waiting to make their glorious appearance on Ambitious Kitchen for nearly two months.

Somedays I wish I could live in my kitchen, leaving the writing, editing, photography and all the other things behind. My happy place is recipe creation; fitting flavors and ingredients together like a puzzle. It’s my favorite part about my job. And also you all. Seeing all the recipes you make of mine makes me extraordinarily happy. I’m in awe that I get to create this life for myself, which keeps me inspired and feeling creative on a daily basis. You’re making this girl’s dream come true.

A few months ago, Tony and I had the chance to visit Pensacola, Florida where we had the absolute BEST truffle fries on the planet. The heavenly hot fries were full of garlic and truffle flavor, melted in your mouth and had this beautiful crusty golden exterior that I just couldn’t get over.

I finally reached my French fry heaven. One of my weaknesses in life. Yours too?
