I’ve decided that one of the things I love most about living in Chicago is that you get to experience such greenery in the spring and summer. It’s a little surprise that hits you with joy after wind whipping and snow for a good 6 months.
Now that summer is here, the outside of our condo is completely covered in beautiful green vines. I love opening my windows each morning and seeing the birds hang out amongst the vines, chirping as early at 4am.
Healthy Blueberry Greek Yogurt Muffins made with whole wheat flour, greek yogurt, naturally sweetened with maple syrup and just a touch of heart healthy avocado oil (or coconut oil!).
Happy Monday. How was your weekend? MINE WAS INCREDIBLE! We had such an amazing workout + brunch at the Under Armour Women’s Chicago Brand House. I’ll have a full recap for you very soon, but just a HUGE shoutout to everyone who came to the event. You guys are literally the best & sweetest humans.
Now for your Monday… I feel as though there’s no better solution for a start to the week other than muffins.
You know me. The queen of the muffs.
WAIT A SECOND. NO.
Let’s stick with the muffin woman. Sounds much better.
Learn how to make a vegan egg substitute four different ways!
Helloooo Sunday! As I’ve gotten older I’ve found that Sunday is actually one of my favorite days of the week.
To me Sunday is the perfect blend of relaxation and productivity — I run errands, do some meal prepping for the week, and of course watch as many episodes of House of Cards as possible. It’s the perfect day to do your favorite hobby, or even learn something new! That’s why today I wanted to share an easy tutorial for your recipes: how to make FOUR different vegan eggs.
Finally I’ve started to get excited for all things wedding. To be honest it took me a while because the whole planning a major event with a million different moving parts is a little daunting and scary. However, I feel much more prepared & excited for the big day. We’ve got 5 1/2 months to go and I know it’s going to fly by.
I know some of you may not be into wedding updates, that’s why I’m keeping them few and far between. However today is one of those days where we talk all about what’s happening! So grab a cup of coffee and get ready to read all about my wedding details (so far).
An easy, healthy dinner that’s great post workout: garlic parmesan rigatoni with chicken sausage, bell peppers, broccoli and onion. Delicious and ready in 20 minutes or less. The whole family will love this meal.
SAY HELLO TO a new series on Ambitious Kitchen: 30 MINUTE THURSDAYS!
Granted this fabulous dinner recipe only takes 20 minutes so now it’s even more exciting, am I right?!
I have to say this series comes at the perfect time because not only is Summer on the horizon but so are the best TV shows: House of Cards (I binged 3 episodes in one night), Game of Thrones (coming in July) and Handmaid’s Tale (I’m starting it soon). Tell me… what are you watching?!
I’m so excited to finally share the Ambitious Kitchen wellness series with you in partnership with Under Armour Women.
Even if you’ve only been following AK for the last few months, you know that I’m an advocate for women finding their own definition of health and wellness. I’ve shared stories on this blog about my struggles with finding balance, perfectionism, stress, losing my father, food addiction, ditching the scale and so much more.
I think of where this journey had led me. Where I’ve been because of blogging and how it’s shaped the person I am today.
Roasted sweet potato arugula salad is a perfect lunch or appetizer. Topped with a light honey mustard yogurt dressing with a hint of gorgeous turmeric color.
How are we all feeling after the long weekend? Relaxed and rejuvenated?
Ready for another 3 day weekend? *me too*
Yesterday I went on a 3 mile run because I woke up with a massive wine hangover and needed some oxygen pumped to my brain. What? Just being honest over here… the best way to cure a hangover is a little bit of exercise.
Ay ay, welcome to the freakin’ weekend — baby we about to have some FUN.
Seriously I haven’t been this excited about Memorial Day weekend in quite sometime. And the best part? We have NOTHING crazy planned. Maybe that’s why I’m looking forward to it so much. We’re going to hang around Chicago, enjoy some patio season weather, grill out, work on wedding stuff and just chill (with a lil Netflix of course).
Okay and I know this show isn’t on Netflix, but I desperately want to watch the Handmaid’s Tale. Oh and the new season of House of Cards come out on the 30th.
Truth be told I’ve never considered myself to be a cheesecake lovah. I’m more into pies, cookies, or basically anything else that’s sweet.
But when my friend Gina sent me her Skinnytaste Fast and Slow Cookbook a few months ago, I knew I wanted to share these easy, mini no bake cheesecakes with you. In Gina’s cookbook, she calls them shooters and serves them in adorable shot glasses.
