Do you ever find yourself eating pancakes at 10pm, cuddled on the couch watching Netflix, all the while being on your computer and listening to music?
Call me a multitasker. Or maybe I have ADD? Hell, it’s 1am and I’m just getting started on this post.
Plus I have almost 20 tabs open on Chrome.
But the point of this isn’t to tell you about how of a night owl I am or debate about my inability to focus. It’s about how much I love breakfast. How easy it is to throw together an omelet, veggies, and a side of toast or sweet potatoes. Or how sometimes after a workout all I really want is protein pancakes with bits of dark chocolate and warm peanut butter smothered on top.
Isn’t it difficult to eat a good breakfast some days? Usually I’m so rushed that all I have time for is an apple and a giant spoonful of nut butter. I’m obviously addicted.
But turkey breakfast patties? Pretty magical is what they are.
I’ve made these little patties time and time again. They are my breakfast AND lunch staple. On days when I don’t have time, I grab a few patties from the freezer and bring them to work and zap them in the microwave. They’re a great low-carb breakfast, snack, or even on top of a salad or paired with veggies for lunch.
My favorite way to enjoy them is with an egg white omelet and a huge sweet potato topped with peanut butter. Yes, I realize I’m talking about peanut butter again. It’s a problem.
These homemade sausages are SO much better then the ones at the store with weird additives and ingredients you can’t pronounce. Another bonus is that they’re super lean and great for when you are trying to eat clean.
They’re sweetened with a tiny bit of maple syrup and real juicy apple chunks. Plus there is also a little cinnamon and nutmeg to keep them full of wonderful spices.

- 1 teaspoon olive oil
- 1/2 yellow onion, finely chopped
- 1 garlic clove, minced
- 1 Honeycrisp or Braeburn apple, finely chopped
- 1/2 teaspoon cinnamon
- pinch of nutmeg
- 1 pound extra lean ground turkey
- 1 1/2 tablespoons pure maple syrup
- 2 egg whites
- 1/4 cup gluten free oat flour (I use Bob's Red Mill)
- 1/2 teaspoon salt
- freshly ground black black pepper
- Preheat oven to 450 degrees F. Line large baking sheet with parchment paper and spray with nonstick cooking spray.
- Heat olive oil in a large frying pan over medium heat. Add onions and and garlic and cook until garlic becomes fragrant, about 3 minutes. Add in diced apples and cook a few minutes more or until apples soften. Remove from heat, transfer to a large bowl, and stir in cinnamon and nutmeg.
- Add in ground turkey, maple syrup, egg whites, oat flour, and salt and pepper; mix well. Divide into 16 patties and place on prepared baking sheet. Bake for 10 minutes or until turkey is no longer pink. Serve with extra maple syrup.
