My latest addiction just so happens to be PANCAKES, and I thought what could be cuter than a pancake bar for those lazy mornings. Or if you’re a mom, something fun and delicious to impress the kids.

If you’ve been following Ambitious Kitchen for a while, then you know my pancake game is on point. I make pancakes at least once a week for Tony and I and enjoy making them healthier and more nutritious (like basically everything else on my site).

For this healthy pancake breakfast bar, I’m teaming up with my friends at Ancient Harvest to bring you protein & fiber packed quinoa-inspired pancakes! So are you ready to create the pancake breakfast of your dreams? Grab a few friends and let’s do it.

What you’ll need:

Pancakes, obviously! I recommend either my whole wheat banana quinoa pancakes, lemon blueberry quinoa pancakes or my quinoa flour banana pancakes. All of these are delicious easy to make AND can be made ahead of time and kept in the freezer for easy reheating. WIN.


How to Make a Healthy Pancake Breakfast Bar |

Toppings! The toppings are a crucial part of the pancake breakfast bar. You can never have too many. Here are some of my favorites:

  • Fresh fruit such as strawberries, blueberries and bananas. Mangoes and pineapple are also terrific!

  • Heart-healthy toppings such as vanilla almond butter.

  • Low-sugar jam just in case any one wants to make peanut butter & jelly pancakes (AKA THE BEST).

  • Pure maple syrup. Preferably Grade B for all the good flavor! I buy most of my maple syrup jugs at Trader J’s.

  • Carob chips or dark chocolate. There’s nothing wrong with a little bit of dark chocolate, because hey, antioxidants and all that jazz. 

  • Coconut flakes. Because coconut is everything good.

  • Low sugar granola. For those who love a good crunch!

  • Plain Greek yogurt. Probiotics on point.

  • Crunchy nuts! Almonds and pecans are my favorite.

Add anything else you’d like!

How to Set Up Your Pancake Bar:

My recommendation is to set this all up on a table in small bowls and/or plates You can keep the pancakes warm in the oven at 2oo degrees F on an oven-safe plate until you’re ready to eat. For each person, plan on three pancakes each. It’s better to have too many rather than too few!

Other things not to forget:

  • Warm coffee

  • Lemon infused water (if you’re fancy like that)

  • Orange juice

  • Forks and knives

  • Napkins

  • Spoons for serving
