Tomato Orzo Soup with Mini Turkey Meatballs

STEP 1

Mix together ground turkey, breadcrumbs, pesto, herbs & spices

STEP 2

Roll into 1/2 inch mini meatballs and brown in a skillet

STEP 3

In a large pot saute garlic, onion & carrots until tender

STEP 4

Add in crushed tomatoes, coconut milk & chicken broth

STEP 5

Stir in orzo, italian seasoning, salt & pepper

STEP 6

Add meatballs to the pot, bring to a boil & reduce to simmer

STEP 8

Stir in spinach, taste & adjust seasoning as necessary

Serve with parmesan, crackers or garlic bread & enjoy!
