Spicy Cashew Thai Chickpea Broccoli Salad

STEP 1

Add chickpeas, broccoli, red cabbage, carrot & bell pepper to a large bowl

STEP 2

Finish with green onion, cilantro & jalapeño

STEP 3

In a small bowl add soy sauce, peanut butter, honey & rice vinegar

STEP 4

Whisk in sesame oil, garlic, cayenne pepper, ginger & warm water until smooth

STEP 5

Pour dressing all over your chopped veggies & toss to combine. Then add cashews

Garnish with extra cashews and enjoy for a delicious lunch!
