Firecracker Chicken Meatballs with Coconut Pineapple Rice

STEP 1

In a large bowl add ground chicken, egg, breadcrumbs, onion, cilantro, jalapeño, sugar, hot sauce & soy sauce

STEP 2

Finish with garlic powder, cumin, paprika, cayenne, salt & pepper and mix well

STEP 3

Use clean hands to form meatballs and brown on all sides in a skillet with olive oil

STEP 4

Remove the meatballs and add coconut milk, pineapple & rice. Then add meatballs back in, cover & cook

STEP 5

After 20 minutes add in red bell pepper, cover & cook for 5 more minutes

Garnish with cilantro & scallions and serve!
