Street Corn Pasta Salad with Cilantro Pesto

STEP 1

Top your corn with olive oil, salt, pepper, chili powder & cumin

STEP 2

Grill your corn until it's nicely charred and cooked, then let it cool

STEP 3

Cook your pasta, then drain it, rinse it with cool water and pour it into a bowl

STEP 4

Blend or process cilantro, cashews, lime juice, garlic, jalapeño, olive oil, salt & pepper

STEP 5

Carefully cut the kernels off of your grilled corn cobs

STEP 6

Toss the pasta with your pesto, then add bell pepper, avocado, goat cheese & diced red onion

STEP 6

Finish with your grilled corn and toss everything well to combine

Garnish with extra goat cheese & cilantro and serve!
