Oh So Fluffy Vegan Banana Oatmeal Muffins

STEP 1

Add mashed banana, coconut sugar and flaxseed meal to a bowl

STEP 2

Add dairy free milk, melted coconut oil & vanilla and mix well

STEP 3

Whisk together flour, rolled oats, baking soda, baking powder, cinnamon & salt

STEP 4

Add the dry ingredients to the wet and mix until just combined (don't overmix!)

STEP 5

Fold in chocolate chips & chopped nuts if you'd like

STEP 6

Divide batter into 10 muffins, top with oatmeal and bake

Let muffins cool and enjoy for the perfect breakfast or snack!
