Summer Garden Crustless Zucchini Pie

STEP 1

Add olive oil to a large skillet and cook down some green onion and garlic

STEP 2

Add corn, bell pepper, mushrooms, tomatoes, salt & pepper and sauté

STEP 3

Whisk together eggs with coconut flour, milk, basil, cheddar cheese, salt & pepper

STEP 4

Add your cooked veggies into a prepared pie pan and top with sliced zucchini

STEP 5

Pour the egg mixture on top, sprinkle with cheddar cheese and bake

Slice and enjoy for an amazing summer brunch!
