STEP 1
Slice zucchini in half, scoop out the centers, arrange them in a baking pan & grease them
STEP 2
Add cilantro, cashews, jalapeño, garlic, lime juice, olive oil, salt & pepper and water to a food processor
STEP 3
Process the homemade pesto until nice and smooth
STEP 4
Add the pesto to a bowl with cooked, shredded chicken, tomatoes and mozzarella
STEP 5
Spoon mixture into each zucchini boat, sprinkle with more mozzarella and bake
