Fiesta Mango Black Bean Quinoa Salad

STEP 1

Cook your quinoa with water for 15 minutes until nice and fluffy

STEP 2

Whisk together lime juice, olive oil, honey, chipotle chili powder, garlic, salt & pepper and dijon mustard

STEP 3

Add cooked quinoa to a bowl with black beans, red bell pepper, mango & red onion

STEP 4

Finish with cilantro, jalapeños & avocado and toss everything to combine

STEP 5

Pour the dressing all over the salad and toss it well to combine

Garnish with fresh cilantro & pepitas and enjoy!
