Chunky Monkey Zucchini Banana Muffins

STEP 1

Whisk together whole wheat pastry flour, baking soda, cinnamon & salt

STEP 2

Add shredded zucchini, mashed banana, olive oil, an egg & vanilla to a bowl

STEP 3

Add honey and almond milk and mix until well combined

STEP 4

Mix the wet & dry ingredients, then fold in chocolate chips, shredded coconut & walnuts

STEP 5

Divide batter into a prepared muffin tin, top with chocolate chips and bake
