Ginger Cashew Chicken Stir Fry

STEP 1

Whisk together cashew butter, coconut aminos, garlic, ginger, water & red pepper flakes

STEP 2

Cook your chicken in coconut oil and season with salt & pepper. Transfer to a bowl

STEP 3

Cook down garlic, green onion, red onion, red pepper, carrots & broccoli until slightly tender

STEP 4

Reduce the heat and mix the chicken and sauce into your skillet

STEP 5

Make your cauliflower rice by pulsing cauliflower florets in a food processor

STEP 6

Transfer the cauliflower rice to a large dish towel and squeeze out all of the moisture

STEP 7

Cook the cauliflower rice in a little coconut oil and season with salt and pepper

STEP 8

To meal prep: divide the cauliflower rice and stir fry into 4 meal prep containers

Or enjoy right away with cashews and a sprinkle of green onion!
