Vegan Pecan Apple Chickpea Salad Wraps

STEP 1

Mash chickpeas in a bowl, then add diced apples and chopped pecans

STEP 2

Mix in celery, dried tart cherries, parsley and green onion

STEP 3

Add tahini, maple syrup, apple cider vinegar and dijon mustard to a small bowl

STEP 4

Finish with garlic powder, salt & pepper and whisk well to combine

STEP 5

Pour the dressing all over the salad and toss until well combined

STEP 6

Lay out a large tortilla and add spinach, shredded carrots and 1/3 of the chickpea salad

STEP 7

Carefully roll up the wrap, tucking in the corners as you go
