One Pan Ginger Chicken Meatballs with Peanut Sauce

STEP 1

In a bowl add ground chicken, egg, breadcrumbs, green onion & cilantro

STEP 2

Add jalapeño, garlic, cayenne, salt, ginger & pepper

STEP 3

Use clean hands to mix and form into 16 golf ball sized meatballs

STEP 4

Brown the meatballs on all sides in sesame oil, then set aside

STEP 5

Whisk together coconut milk, soy sauce, peanut butter & hot sauce

STEP 6

Add carrots & the meatballs, bring to a simmer, cover and cook on low for 15 minutes

STEP 7

Add bell pepper and peas and simmer for 5 more minutes

STEP 8

Serve with quinoa, rice or even spiralized veggies!

Top with extra sauce, cilantro & chopped peanuts and enjoy!
