Brown Butter Pumpkin Snickerdoodles

STEP 1

Start by browning your butter, then pour it into a bowl to cool

STEP 2

Beat together the cooled brown butter, brown sugar & regular sugar

STEP 3

Beat in an egg white, vanilla extract & pumpkin puree

STEP 4

In a separate bowl whisk flour, pumpkin pie spice, cream of tartar, baking soda & salt

STEP 5

Slow add the dry ingredients to the wet and mix until just combined

STEP 6

Cover the bowl and refrigerate for 1-2 hours

STEP 7

While the dough is chilling, mix together cinnamon and sugar

STEP 8

Scoop 1 1/2 - 2 tablespoons of dough and roll it into a ball

STEP 9

Roll each dough ball in the cinnamon-sugar, place on a baking sheet & bake
