Butternut Squash, Chickpea & Lentil Moroccan Stew

STEP 1

Heat olive oil in a large pot, then saute garlic and onion for a few minutes

STEP 2

Stir in cumin, cinnamon, turmeric and cayenne pepper

STEP 3

Add crushed tomatoes, vegetable broth, lentils and chickpeas

STEP 4

Stir in butternut squash, salt & pepper and bring the stew to a boil

STEP 5

Cover, reduce heat to low and simmer for 20 minutes. Then stir in lemon juice

Serve the stew hot, garnish with fresh cilantro and enjoy!
