Healing Curry Butternut Squash Lentil Soup

STEP 1

Add coconut oil to a large pot and saute onion, garlic & ginger

STEP 2

Add carrot, butternut squash, curry powder and turmeric and stir to coat

STEP 3

Add in light coconut milk, vegetable broth and lentils

STEP 4

Stir in peanut butter, salt & pepper, bring soup to a boil, then cover & simmer

STEP 5

After 20 minutes, blend half of the soup in a blender and stir it back into the soup pot

STEP 6

Stir in spinach until just wilted

Serve with fresh cilantro & chopped peanuts for the perfect plant based meal!
