Cozy Roasted Vegetable Butternut Squash Lasagna

STEP 1

Start by cutting your butternut squash in half and placing it on a baking sheet to roast

STEP 2

Add bell pepper, red onion, mushrooms and zucchini to another baking sheet

STEP 3

Toss veggies with olive oil, garlic powder, salt & pepper then roast with the squash

STEP 4

While the veggies are roasting, mix together ricotta, an egg, salt & pepper in a bowl

STEP 5

Boil your lasagna noodles until they're just al dente

STEP 6

Add the butternut squash, brown sugar, cozy spices, salt & pepper to a blender

STEP 7

Blend it all up, then spread 3/4 cup of the mixture into your prepared pan

STEP 8

Layer the lasagna noodles, ricotta mixture & roasted veggies

STEP 9

Sprinkle mozzarella, then repeat the layers

STEP 10

Cover the lasagna, then bake it all up

Serve hot with a sprinkle of fresh parsley and devour!
