Mom's Authentic Puerto Rican Rice and Beans

STEP 1

Start by soaking your beans in water or broth for 6-8 hours

STEP 2

Bring the beans to a boil, add bay leaves, then reduce heat & simmer until soft

STEP 3

Make the sofrito by cooking down onion, green pepper, garlic and cilantro

STEP 4

Stir in tomato sauce and sazon and simmer to let the sauce come together

STEP 5

Add the sofrito to the pot of beans and simmer on medium low

STEP 6

While the beans simmer, make another batch of sofrito for the rice

STEP 7

Add tomato sauce, sazon and adobo and let simmer

STEP 8

Add green pigeon peas & water, bring to a boil, then add rice and simmer covered

STEP 9

Serve the rice and beans together

Garnish with cilantro, avocado and hot sauce if you'd like!
