One Pot Moroccan-Inspired Chickpea Quinoa Salad

STEP 1

Heat coconut oil in a large pot, then add chopped onion and cook until softened

STEP 2

Stir in turmeric, cumin, cinnamon, salt & pepper

STEP 3

Stir in broth and quinoa, then cover and let simmer until quinoa is fully cooked

STEP 4

Fluff the quinoa, then fold in chickpeas, dried cranberries and fresh parsley
