Yesterday Abra and I went to Studio Three and did their Ellie Goulding & Lana Del Rey themed cycling class. It was the first time I had hit the gym in nearly a month (except for that one time I had 10 mins and did 50 squats + lunges in Australia and couldn’t walk for days after).

Anyway, I can’t tell you just how good it felt to get moving again, even if it was 45 minutes. It made my day that much better.

As a kid, my Dad would always make me mac and cheese made with sharp or white cheddar, LOTS and lots of pepper. If I was lucky, he’d would add peas (because I loved them more than any other veggie in the world).

Now that I’m into full on #adulting into my late 20’s, I LOVE when my mac and cheese is packed with anything just a little bit unique: truffle mac and cheese, mac and cheese with a Ritz cracker topping, mac and cheese with brussels, butternut squash mac and cheese, or even a classic broccoli cheddar mac and cheese. Can mac and cheese be its own food group yet?

Well it’s officially the end of zucchini week. Abra and I really had a delicious week here baking with green things and spiralizing our hearts out and we hope you loved it too. I also had a wedding freakout about how expensive things are getting.

Everyone says it’s going to be perfect come the day of, but whoa. What the hell? This shit is crazy. Tony and I have this amazing, beautiful life together and can have it without a giant party. In fact this giant party of a wedding is just causing me a ridiculous amount of stress. I 100% understand why people hire wedding planners now. I’m going out of my damn mind.

Oh hey Monday. I hope you guys had an amazing (and hopefully) shorter week last week. My mom and I spent some much needed time together exploring and walking around Chicago, getting pedicures, baking tahini brownies, new muffin recipes, and making her amazing Puerto Rican food that I haven’t had since I was 18. Where does the time go?

Every time I’m with my mom, I’m inspired to go back to the authentic flavors of Latin cuisine that I grew up with. Sofrito, homemade sazon, plantains, green chile and so much more. I can’t wait to start incorporating those flavors more into my recipes and teaching you all about the food that’s near and dear to my heart.

Delicious and easy 30 minute dinner for two: Chili Maple Lime Salmon Bowls with amazing mango & edamame mixed with sweet forbidden rice.

Lately, we’ve been loving salmon. It’s the BEST easy healthy meal out there, am I right?

Just the other day, I stepped into Whole Foods after a class at Crosstown Fitness. Usually I head there after my workout. Normally I shop at Trader Joe’s because it’s much cheaper, but Whole Foods happens to be incredibly convenient when I need last minute ingredients. Plus sometimes they have pretty good deals on produce (all the berries right now!).
