Bright and flavorful roasted veggie mediterranean pasta with goat cheese is the perfect vegetarian meal! It’s packed with fresh veggies, tossed in a delicious cashew pesto sauce and perfect served warm or cold.
I’m not going to lie, I deeply procrastinated on writing this post, not because I wasn’t excited to talk about this pasta (trust me it’s gooooood) but because I came down with the MOST OUTRAGEOUS cold on the planet. It went from worse to can’t breathe kind of cold and lasted for a straight week.
Freezer friendly breakfast burritos that are both packed with nutritious veggies and protein for the ultimate on the go breakfast! Tip: make them ahead and reheat later. This post is sponsored by the American Egg Board.
If there’s one breakfast item I go out of my way to order, it’s breakfast burritos. There used to be a cafe inside my hometown gym that sold amazing breakfast burritos with eggs, roasted red peppers, salsa and cheddar cheese. It was by far my favorite part of my morning after a feel-good endorphin session. (I mean, duh, of course a food blogger most looks forward to eating.)
Sweet & savory 30-minute Moroccan chickpea quinoa salad made in one pot. Delicious flavors and the perfect vegetarian meal to prep for lunch!
Yesterday Abra and I went to Studio Three and did their Ellie Goulding & Lana Del Rey themed cycling class. It was the first time I had hit the gym in nearly a month (except for that one time I had 10 mins and did 50 squats + lunges in Australia and couldn’t walk for days after).
Anyway, I can’t tell you just how good it felt to get moving again, even if it was 45 minutes. It made my day that much better.
A spicy southwest inspired version of tuna mac and cheese with black beans and yellowfin tuna made in partnership with Genova Seafood! Great for weeknight dinners, game day or anytime you have a comfort food craving.
Raise your hand if you loveeeee mac and cheese.
As a kid, my Dad would always make me mac and cheese made with sharp or white cheddar, LOTS and lots of pepper. If I was lucky, he’d would add peas (because I loved them more than any other veggie in the world).
Now that I’m into full on #adulting into my late 20’s, I LOVE when my mac and cheese is packed with anything just a little bit unique: truffle mac and cheese, mac and cheese with a Ritz cracker topping, mac and cheese with brussels, butternut squash mac and cheese, or even a classic broccoli cheddar mac and cheese. Can mac and cheese be its own food group yet?
Thai Green Beans made on the stovetop with a delicious easy peanut sauce. These will be your new favorite way to eat green beans!
Look we all need to get our veggies in. It’s important for the bones, ya’ll.
I used to be really good about eating veggies at every meal but sometimes eggs and avocado toast call my name and then I eat chocolate for dessert and call it a day.
I’m only human.
