Life has gotten incredibly busy lately, so I must apologize for being few and far between when it comes to posting on the blog. The wedding is about two months away and we’ve still got SO much to do (ummm I haven’t gotten Tony’s ring yet). Also it doesn’t help that all I want to do is BAKE and cook all the cozy wonderful things like soup, pumpkin bread, apple butter and cookies. Food distracts me.

Hello, hello. Welcome to Muffin Monday. It’s been awhile, but I’m back with an outrageously delicious new recipe ready to power you through the week. But first, how was your weekend?

Tony and I watched the Chicago Air & Water show from our rooftop, cleaned our house (necessary and a little therapeutic), went to a BBQ with some friends, ate donuts and walked at least 12,000 steps each day. Oh and of course, watched a little Game of Thrones. Sunday traditions are my favorite. What are yours?

Baked coconut donuts with a sweet berry glaze. Easy to make and perfect for patriotic holidays like the 4th of July. I call these the All American Donuts.

Did you guys see my Instagram stories this weekend? I FINALLY got around to creating my little patio garden. I picked up a few plants on Saturday afternoon after my workout then spent the rest of the afternoon planting gorgeous arrangements on my deck before a storm rolled through. Guys, I’m not kidding when I say I had such a great time.

I still want to plant a few herbs and possibly a tomato plant, but we’ll get there eventually.

I’m backkkkkkk… and dang, what a trip! The weather was B-E-A-U-T-I-F-U-L! Each day the blue sky sparkled without a cloud in sight while parasailers floated nearby. We played tennis, got massages, laid by the beach, swam in the infinity pool and drank WAY too many margaritas.

Of course, I’d have more photos to show you but my phone was stolen. Which was a little bit of a bummer, but then I said hello to the new iPhone 7. This little mama is happy.
