Delicious veggie packed vegan black bean burgers with plenty of spices. I call these the ultimate black bean burger. Top with avocado, onion, tomato and a super addicting garlic tahini sauce!

30 minute THURSDAYS ARE BACK! Are you excited?!

I’m sitting in a cute little juice shop writing this post. The walls are white and the menu is a multi-colored rainbow. It really screams millennial, you know? They even have a smoothie bowl called the ‘Fruity Pebbowl’. It has something called blue magik in it.

As you can see via Instagram, Tony and I have been grilling up a storm this summer. In fact, we been grilling on our deck nearly every night while our adorable little cat Milly watches and meows outside the window. We call it family night. Hah.

I’ve been wanting to make beet burgers ever since my Mom introduced me to them a few years back. Whole Foods used to make this fantastic version full of crunchy walnuts, beets and so much flavor; often times we’d scarf them down after our workouts.

How was your weekend? We finally set up our living room with our new rug, plus I just ordered a custom designed ottoman, which I’m really quite excited about. We picked a dark blue velvet color and can’t wait to see it when it arrives in a few weeks. Other new things? A black custom french-looking desk and a small side table that’s going to be painted a bronze gold. Obsessed is an understatement.

Hmmm what else? Chicago’s been insane lately. We’ve had the Chicago marathon, the Cubs in the playoffs and the Bears actually won TWO games. Thus, I’ve been eating a little too much pizza and bar food lately. What I’m really craving now is a seriously good veggie burger with a huge side salad.

My favorite way to eat food this summer is in the form of grilling. Also known as the easiest way to make a delicious meal.

Here’s something I learned recently: Did you know that you can place a can of baked beans right on the grill? Tony taught me this trick and I was thoroughly impressed. All you have to do is open the can, remove the label, then place on the grill until bubbly hot. Easy and no pans required!

Now that you’ve got that trick under your belt you have to time to whip up some of these sweet and spicy turkey burgers.
