Happy round up Sunday! Didn’t know it was a thing?
Every Sunday I’m going to be rounding up some amazing AK recipes with different themes just for you. Why? Because sometimes you don’t know you want something until it’s right in front of you. Like these incredible homemade nut butters.
Did you know you can make grilled sweet potato fries in no time at all? Try this amazing recipe for sweet potato fries with a hint of garlic and sesame flavor! Served with a yogurt curry dip.
I’ve decided that one of the things I love most about living in Chicago is that you get to experience such greenery in the spring and summer. It’s a little surprise that hits you with joy after wind whipping and snow for a good 6 months.
Now that summer is here, the outside of our condo is completely covered in beautiful green vines. I love opening my windows each morning and seeing the birds hang out amongst the vines, chirping as early at 4am.
Roasted sweet potato arugula salad is a perfect lunch or appetizer. Topped with a light honey mustard yogurt dressing with a hint of gorgeous turmeric color.
How are we all feeling after the long weekend? Relaxed and rejuvenated?
Ready for another 3 day weekend? *me too*
Yesterday I went on a 3 mile run because I woke up with a massive wine hangover and needed some oxygen pumped to my brain. What? Just being honest over here… the best way to cure a hangover is a little bit of exercise.
Juicy grilled jerk chicken drumsticks with a delicious Caribbean Rice & sweet mango salsa. The perfect healthy grilling recipe for summertime!
When I was a wee little nugget aka a little lady, my favorite kind of chicken was chicken drumsticks. My mom grilled and baked them all the time for us, usually slightly coated or sometimes in zippy Puerto Rican spices with creamy beans and Spanish rice on the side. The chicken was incredibly juicy, so much more so than regular chicken breasts.
The best guacamole recipe EVER. A mix between creamy and chunky with bites of heat from jalapeno and flavor from cilantro and lime juice. You need this in your life!
When Tony and I first started dating he didn’t do much exploration with meals. In fact I’m 99% sure most of his diet consisted of corn dogs, fries and frozen pizza. It was a scary time for me.
Somewhat joking. Somewhat not.
As our relationship progressed, so did Tony’s tastebuds and his discovery of new cuisines. I’ve tried both Thai food and sushi with him for the first time. I introduced him to avocado black bean brownies. He started eating refried beans. He’s now obsessed with chocolate and homemade Reese’s eggs. He enjoys sprouted bread and brown rice. He also thinks my banana bread is the best thing on this planet (okay in the world of banana breads, it totally is).
Avocado pesto chicken salad made with an easy homemade nut free pumpkin seed & avocado pesto, then piled on toasted bread for a delicious, healthy sandwich.
Raise your hand if you LOVE pesto.
Okay good, me too.
And if you love it as much as I do, then you’re in for a little treat because this pumpkin seed avocado pesto is just incredible — it’s packed with healthy fats, lean protein and herbs and might just be the best thing I’ve ever tossed with shredded or leftover grilled chicken.
Have you guys been to my friend Liz’s site yet? She’s a mama of two who blogs about healthy authentic food with global flavors. I freaking love her because she’s the real deal in every way; Liz tells it how it is and keeps herself authentic and real. We’ve been friends for years and every single time we’re together we giggle over the most ridiculous things (including that one time she had someone deliver Buffalo Wild Wings to my hotel room).

I have to admit that my Grandmother would probably kill me if she knew I was making enchilada sauce without oil, flour, or real dried chiles.
However, sometimes you find shortcuts that just work as delicious as the real thing. So while this isn’t authentic enchilada sauce, it is still absolutely lip-smacking delicious, flavorful, healthy and SUPER easy to make. Yep, we’re talking in 10-15 minutes you can have the best enchilada sauce ever!
Spicy Maple Glazed Salmon for two makes the perfect weeknight dinner. All you need is 20 minutes to make this healthy meal. Serve with sweet potato fries and veggies, or a lovely kale and brussels sprouts salad!
I’m trying to settle back into the routine of things at home after a little over a week in Israel. It’s going to take me a while to sum up the incredible experiences I had there, but I’ll preface it by saying that was truly a life changing experience. While I’m definitely sleep-deprived, my soul feels peaceful and happy. Over the next few weeks, my plan is to break down my trip by experience and through recipes I enjoyed while abroad.
Rainbow veggies roasted to perfection with garlic, olive oil and turmeric, then drizzled with a sweet and spicy chipotle honey yogurt dressing. Throw in some quinoa or enjoy with grilled chicken or salmon as a main dish!
Let’s talk about this whole Thanksgiving situation coming up. What are you making and what are your family recipe staples? I want to know because I’m always looking to add something new and exciting to the menu.
This year I plan on making my sweet potato casserole, cranberry orange sauce, some sort of cherry pie (OMG YES), buttery biscuits, a spinach pear salad and roasted butternut squash. Last year we tried Heartbeet Kitchen’s honey carrots, which were SO INSANELY GOOD I nearly ate them all myself.
