I’m heading to Boston next week for a 5 day vacation. I literally cannot wait! I’ll be visiting my good friends from Australia; we’ve kept in close contact over the years and try and visit every so often.

Boston has great weather this time of year, too! I’m excited to check out some restaurants and explore a bit so definitely let me know if you have any suggestions!

I also have a new obsession to share: Banana bread breakfast cookies. Normally I would say regular cookies, but since these taste like banana bread AND oatmeal, I’m really quite in love. And when chocolate chips are thrown in the mix? OMG!

Plus they only take 15 minutes to make and clock in at around 60 calories per cookie. YES!

This really isn’t even a recipe. It’s me telling you to mix two things together for sweet satisfaction that you don’t have to feel guilty about.

For reals. No weird processed ingredients from a box. Just all natural stuff.

Dairy free. Gluten Free (use GF oats). Nut free. Vegan. Vegetarian. I think they’re a good breakfast (or healthy treat!) for whoever you are. That is unless you’re allergic to bananas or oats. Sorry!

It’s been incredibly warm in Minnesota so I’ve been trying to workout outside as much as possible. Yesterday I biked 15 miles; my legs are feeling a little tired today! I find that drinking lots and lots of water helps with all of the aches. That and a giant spoonful of peanut butter. Hehe.

My meals are all prepared for the week, too! I’m trying to eat clean so I baked garlic chicken, and roasted broccoli and sweet potatoes. I also made some delicious gluten free pumpkin bars, and sauteed kale & garden veggies. I don’t have much free time on the weeknights so my meals need to be ready. Plus it helps me to stay on track when trying to eat right.

Last week I made this delicious vegetarian chili packed with lentils & quinoa. Mmmmmm!

This chili reminded me of my sweet potato and black bean quinoa chili; the flavors are very similar and deeeelicious!

So much goodness goes into a pot: lentils, quinoa, black beans, kidney beans, red pepper, fresh tomatoes, garlic, cilantro, cumin, chili powder, cinnamon, plus a touch of curry powder.

Let’s not forget about the nutrition: a little over 300 calories, 17g of fiber, and 18g of protein. This chili will fill you up!

Hi! I came down with little cold yesterday, so I couldn’t finish writing this recipe. But I chugged NyQuil and ate cough drops like candy so now I’m feeling much better. I even went on a 14 mile bike ride this morning. Yay.

I have to tell you that my biggest goal has been to blog on a more frequent basis, thus I spent this past weekend developing three new recipes. And of course, pumpkin season is coming… you know what that means. PUMPKIN EVERYTHING. Are you excited? I am.

But first, some healthy truffles for you.

Yes! The black beans are back. They’re hiding in these fudgy chocolate bites. And they’re AWESOME.

Ummmm please don’t stare at your screen like that. Don’t question the deliciousness! These are addicting! In all seriousness, if you liked my black bean brownies or my chickpea blondies, then I’m sure you’ll LOVE these.

So what else is hiding in the truffles besides the beans? Good quality cocoa powder, coconut oil (or olive), a touch of maple syrup, and chocolate protein powder if you’d like a protein boost. I’ve included directions for both versions. Just remember that if you want to keep the truffles vegan, then simply use a vegan chocolate protein powder such as Vega.

Hello Monday. Hello delicious little veggie burgers that I want to devour.

I’m currently on a juice cleanse. I’ve done one before, so it’s not really a shock to my system. However staring at pictures of these burgers is making me so hungry. GIVE ME DAT BURGA. With a side of sweet potato fries and half of cup of sriracha please.

NOM.

But for reals, veggie burgers are totally my jam. I love em! They’re so much more delicious than those creepy burgers packed with soy and foreign ingredients. I already have a sweet potato chickpea burger and a lentil burger that you should try!

These burgers are the real thing: spicy, sweet, fresh, totally bomb little love bites in your mouth.

I am quite descriptive today. Probs because I’m on mission to bring you deliciousness. HEY ooooooo.

Happy Monday. Just kidding. Who actually likes Mondays?

Not me. Not ever.

To be honest, I kind of need a break. I’ve been working a ridiculous amount lately and I feel as though I need some down time. Since I work a full time job outside of this blog, I really only have the time to create recipes on the weekends. That translates into me working all the time. From Saturday morning to Sunday evening you can find me at Ambitious Kitchen HQ creating absurd messes that I never want to clean up.

Okay I’ll stop complaining now; thanks for hearing me out. Whatever the case, chocolate is necessary today.

I think one of the most important things in any relationship is finding someone who can make you laugh. Or who you can laugh along with. I’m a HUGE goofball (and pretty weird), so finding someone that understands my sense of humor is essential.

Oh, I think I forgot to tell you guys I am dating. Not serious marriage dating, just having fun and searching for that little bit of laughter in my life. Good, right? Well obviously for whoever I date it’s good. I mean, what kind of guy can resist freshly baked cookies and mexican food for dinner?

There are reasons I can’t go around cooking for all of my dates — food is a serious attachment. That’s why I only bake the life-changing cookies when I REALLY like someone. Because after those cookies, there is no turning back.

Anyway I’ll keep you posted on all of that… as if you care. But let’s pretend you do, because frankly I can’t just talk about tacos all day.

Please excuse my mini absence from blogging! I’ve really wanted to bring you a recipe, but I’ve been quite busy demolishing chickpea blondies, working, and hitting the yoga studio. Every day I look at the clock and it seems to always be 11PM… I have absolutely no idea where the time goes. I do know that the weather in Minnesota has been OUTSTANDING lately, so instead of editing photos and cooking all the time I’ve been trying enjoying the sunshine (we only get 5 months of it).

And these cookies? Well I’ve been enjoying them, too.

Due to my recent yoga challenge, I’ve been trying to eat better but obviously my sweet tooth is ridiculous. I will admit that I’ve gone through a couple of batches of my black bean brownies, but I kind of wanted something a little different.

Cookies are always a great solution.

Follow my blog with Bloglovin

If you follow me on Instagram, you’ve probably seen my yoga tweets lately (#akyogachallenge). I’m falling in love with my practice and it feels absolutely incredible.

Now what’s funny is that I’m the type of person who NEEDS intensity from a workout. Usually kickboxing and running tend to be my favorites because I love the ‘high’, uplifting feeling that comes from those cardio endorphins. What’s unusual is that I’ve found that I get the same feeling from my yoga practice, except I don’t have to run 8 miles to feel like I accomplished something. As soon as I step onto my mat, I let my stress go and focus my energy on breathing and thinking positively.

Most of all, yoga is slowly teaching me to appreciate the beauty within myself. It seems that we’re all searching for something, whether it be a change in our lives, bodies, or our hearts; however, before any change can happen we have to learn to accept ourselves from within. For me this yoga challenge is about so much more than just being fit.

Ahhhhh I live for the weekends, and this last one was just so lovely and relaxing. I mean who doesn’t love laying in bed an extra half hour on Saturday mornings? These days, it’s a luxury.

That being said, I’m starting to realize that I can no longer be sleep deprived, over-caffeinate myself, and still function like a normal human being. My habits of staying up until 1AM on the weekdays are starting to wear on me. Also, I should make a note to stop checking my email at 3AM. Clearly I have no idea what the term ‘unplugged’ means.

Oh well. On to more exciting things…

On Saturday I found 10 bananas in a brown paper bag that I had purchased eariler in the week. Thank goodness because I was in a baking mood! MUFFINS, BREADS, COOKIES… I can’t stop.

Bananas are my absolute favorite! They pack potassium and digestible (good-for-you) carbs. So, what does this mean? Well, they give your body fuel and pretty much make you feel like a rock star. But not the kind of rock stars that do drugs.

In all seriousness, I love baking with bananas because they add moisture, act as a binder, and have enough flavor where you don’t need to add additional sugar.

Are you a enthusiast in life? Are you doing what you love? Are you following your passions, your dreams, and pushing your boundaries?

I’ve been asking myself all of those questions because most days it feels like I’m chasing an unknown dream. However, I know that I’m meant to be on this journey and that ultimately it’s the right choice for me. For some reason, I feel compelled to write, to make and share recipes, and to absolutely pour my heart into my craft.

Of course I’m sure you have a passion too — something that makes your heart beat enthusiastically; but are you doing something about it? So many of us wait for moments of success to appear in front of us instead of seeking out and pursuing what we truly want. The important thing is to let your passion flow freely and enable your dreams to live wildly. Your intuition will guide you through your fear.

Perhaps you don’t know what your passion is yet. If that’s the case, ask yourself this what you do effortlessly. We all create our own happiness and the most important thing I’ve realized is that we all have limited time. So spend the time you do have, doing what you LOVE!
