Incredibly flavorful yellow curry chicken and rice made in one pot with plenty of veggies and delicious flavors from coconut milk, ginger, garlic and turmeric. Great for meal prep!

Hello, hello! I hope you’re reading this with a smile on your face, a cup of coffee or tea in your cup and of course that you had a relaxing, rejuvenating weekend. Did you do anything fun?

We spent Friday night dining out at my favorite sushi place in the world and sipping wine. I was craving the roll called the black mafia — if you’re ever craving sushi in Chicago, this place is where it’s at!

Saturday went by quick too — we met our wedding photographers and scoped out beautiful spots around the city to take wedding photos (we’re less than two weeks away). And on Sunday, I relaxed on the couch, made a puerto rican chicken stew with tostones and caught up on several episodes of Stranger Things.

This veggie packed turkey bacon quiche is a protein packed breakfast that’s GREAT for meal prep! Make it and then enjoy slices all week long with hot sauce & avocado on the side.

As you may or may not know, I had the BEST weekend ever with all of my bridesmaids for my bachelorette party in Scottsdale, AZ. It was such a relaxing, rejuvenating weekend full of amazing conversations, girl time, hiking, tacos, margaritas, guac + all the chips. I swear to you, my belly needs a break from tequila for a while.

Enchilada turkey meatloaf stuffed with sharp cheddar cheese and jalapenos to make this a deliciously spicy and FUN dinner idea!

As I was photographing this meatloaf, I thought to myself how difficult it was to actually make meatloaf look delicious. Then again I thought, maybe a saucy photos are the way to do it. Saucy photos are popular on Pinterest so I’ve concluded that people must love them.

OHHHH hi! I’ve been teasing this beautiful recipe for a while now on Instagram stories and I couldn’t be more excited to finally share one of my favorite comfort foods in the entire world: my mom’s Puerto Rican Rice and Beans.

As many of you know, my mom is full Puerto Rican, as are my grandparents. My childhood dinner’s were often full of hispanic cuisine — often empanadas, rice and beans, tostones, pazole and ALL THE GOOD THINGS IN LIFE. More recently, I’ve connected with recipes that are from my heritage and started cooking from the soul again. Personally, it feels incredibly rewarding when Puerto Rican soul food fills my home with it’s intoxicating, aromatic spices.

And even if you aren’t Puerto Rican, why not try something new?! We could all use a good dose of global inspired creativity and cooking in our lives. These rice and beans are the perfect way to start.

Remember when cauliflower came onto the food scene a few years back? Now it’s become so popular that it’s hard to find a restaurant that doesn’t have roasted cauliflower on their menu. It’s even mainstream enough that Trader Joe’s makes cauliflower rice AND cauliflower pizza crust (have you tried it?).

Oh hey Monday. I hope you guys had an amazing (and hopefully) shorter week last week. My mom and I spent some much needed time together exploring and walking around Chicago, getting pedicures, baking tahini brownies, new muffin recipes, and making her amazing Puerto Rican food that I haven’t had since I was 18. Where does the time go?

Every time I’m with my mom, I’m inspired to go back to the authentic flavors of Latin cuisine that I grew up with. Sofrito, homemade sazon, plantains, green chile and so much more. I can’t wait to start incorporating those flavors more into my recipes and teaching you all about the food that’s near and dear to my heart.

Delicious and easy 30 minute dinner for two: Chili Maple Lime Salmon Bowls with amazing mango & edamame mixed with sweet forbidden rice.

Lately, we’ve been loving salmon. It’s the BEST easy healthy meal out there, am I right?

Just the other day, I stepped into Whole Foods after a class at Crosstown Fitness. Usually I head there after my workout. Normally I shop at Trader Joe’s because it’s much cheaper, but Whole Foods happens to be incredibly convenient when I need last minute ingredients. Plus sometimes they have pretty good deals on produce (all the berries right now!).
