Fluffy and delicious chocolate chip banana oatmeal muffins made with wholesome ingredients like Coach’s Oats, Greek yogurt and flaxseed meal. They’re perfect for a quick breakfast or snack on-the-go!

Hello, hello. Welcome to Muffin Monday. It’s been awhile, but I’m back with an outrageously delicious new recipe ready to power you through the week. But first, how was your weekend?

Tony and I watched the Chicago Air & Water show from our rooftop, cleaned our house (necessary and a little therapeutic), went to a BBQ with some friends, ate donuts and walked at least 12,000 steps each day. Oh and of course, watched a little Game of Thrones. Sunday traditions are my favorite. What are yours?

Now that we’re onto a new week, I want to chat about why YOU need to make these muffins. JUST LOOK AT HOW GLORIOUS THEY ARE.

Spicy Roasted Chickpeas with a slight tang from Colman’s Dry Mustard and a kick from cayenne pepper. You’re going to love this protein-packed on-the-go snack.

You know what’s extremely essential for everyday life? SNACKS. There’s absolutely nothing that makes me happier than a 3pm nourishing snack that kicks hunger’s booty goodbye.

I love wandering into the kitchen for cup of coffee with a little almond milk, and a favorite snack. Most of the time I’m a sweet girl, but give me something a little crunchy, salty and crispy and I will bow down to the snack gods.

Not sure if you guys are happy about zucchini week being over or completely devastated. I’m ready for a little something different in the recipe rotation because guess what I learned? Tony hates zucchini. He told me this after he picked the roasted zucchini out of the enchilada casserole I made. Funny enough, he did completely demolished several slices of my chocolate zucchini cake with zero complaints.

Heh. Men.

I’m backkkkkkk… and dang, what a trip! The weather was B-E-A-U-T-I-F-U-L! Each day the blue sky sparkled without a cloud in sight while parasailers floated nearby. We played tennis, got massages, laid by the beach, swam in the infinity pool and drank WAY too many margaritas.

Of course, I’d have more photos to show you but my phone was stolen. Which was a little bit of a bummer, but then I said hello to the new iPhone 7. This little mama is happy.

Easy, one bowl maple peanut butter cookies made with only 5 simple ingredients. Grain free, gluten free and dairy free. Only 20 minutes from start to finish.

Confession: These could be the easiest cookies I have on the blog. It’s almost a no brainer recipe that you can’t mess up. And guess what? These cookies are gluten free, grain free and dairy free, so if you’re looking for a cookie that meets that criteria, then these are for you.

Actually wait, if you happen to love peanut butter, then these are for you. And if you don’t love peanut butter, then simply use cashew or almond butter. Told you they were easy.

Peanut butter protein bars made with simple, healthy ingredients like oats, peanut butter, chia seed, coconut and protein powder. Drizzled with chocolate and a little sea salt. Truly the ultimate protein bar because you can easily make it your own!

When I was first learning how to refuel my body after a workout, I would grab whatever snack was available in the gym’s vending machine. At the time, no one told me that reading the ingredients was very important; it was 2009, and everyone was still on the low-fat diet craze. Clearly the gym I was a member of didn’t know any better, or just didn’t care.

I remembering gobbling down the bars with weird ingredients: crunchy rice, fake fiber and sugar, and most likely a terrible protein source. Shortly after the bars with insane amounts of fiber came on the scene; they were filled with fiber that isn’t even found in nature, but rather made in a lab. Those sketchy mofos.
