Utah has proven to be a true Winter Wonderland thanks to some unexpected snowy weather here. I arrived yesterday to snow dusted roads, slick driving conditions and wonderful steaming cups of hot chocolate. It’s ski weather!

Fortunately, all this powdered sugar dust has really put me into some sort of delusional Grinch-free holiday mood. You know, the one where I blast Mariah Carey’s Christmas album all day and night, then get on Amazon and order every present I can think of. My friends and family are getting lucky this year. VERY VERY LUCKY.

Right now I’m on a plane to Utah, heading to Solitude Resort in Park City for a beautiful ski trip. It’s funny, I don’t remember the last time I went skiing. Probably 7th grade? I don’t remember being too terrible so maybe I’ll pick it back up again. Or I’ll just fall on my ass and enjoy a really good workout. Either way, it’s going to be a blast.

And honestly, I’m so excited for the rest of December! Lots of cookie baking, a vacation to Florida and Minnesota for Christmas.

I hope your weekend was as lovely as ever. I spent Saturday morning rowing 21,000+ meters (a half marathon) at Iron & Oar, a local Chicago workout studio. Honestly I had only rowed maybe once before signing up for the half marathon. Not sure what I was thinking, but I’m happy that I committed to it. Not only was the race actually fun, but my legs hurt in the best way. That sounds odd, but if you love a good tough workout you know what I mean. Best yet, we got 3rd place and didn’t even train! WHOOP!

After the race, I enjoyed a GIANT cheat meal with Tony, followed by two of these chocolate peanut butter truffles that were waiting patiently for me in the freezer. I’m obsessed with the crispy, crunchy texture and how they resemble the taste of peanut butter cup.

How was your Thanksgiving? I’m so happy I was able to take the weekend off and enjoy some time with my Grandma; we had a wonderful time eating, shopping and laughing.

Unfortunately her wallet was stolen while we were out shopping. Tis the season for thieving? Ugh! Even worse, she had some pretty important documents in there. But the good news is that we got her back on the plane safe and sound (without an ID)! I guess the TSA knows more about you than you think.

Tony and I are getting ready to move into our new apartment next week. I can’t believe it’s already here! We’re really excited because not only is the kitchen bigger, but we’ll also have a second bedroom that I plan on transforming into an office/guest bedroom.

I have to admit that we haven’t started packing yet. In fact I’m actually in Boston and Vermont for the next few days visiting Sarah. So of course, we’ll do everything last minute and eat every last thing in the fridge. That’s why this granola is going to really come in handy on busy packing mornings.

I’m a little late to the fig lovin’ game. I’m not sure why. Perhaps it was because I never grew up eating them or maybe it was because their season peaked during the time when berries were still gorgeously cheap and apple season was just on the horizon.

Either way I’m here now, eating their beauty in my morning oatmeal and on breakfast toast. I’ve had them on pizza paired with blue cheese, bacon, and a heaping pile of that zesty arugula. Seriously, figs are just too damn addicting.

Looking for a healthy snack? Try these healthy NO BAKE energy bites that taste like a scrumptious oatmeal peanut butter cookie. The chia & cacao nibs add nutrition, fiber & protein!

Do you wanna know what my eating routine was all last week? (Even if you don’t, I’m still going to tell you.)

Well, it’s pretty basic: Eating at the Whole Foods salad bar and shoveling these no bake oatmeal peanut butter cookie energy bites into my mouth at an extremely fast pace.

From last week’s eating adventures, I’ve learned two things: 1) It’s astonishing how much you can spend on a salad bar AND 2) I absolutely plan on making these energy bites every week for the rest of summer. Because once summer is over, it’s BAKING season (not that it ever ended for me).

What’s your favorite kind of chip?

Mine are probably either Sun Chips or anything sweet potato flavored. Actually there was an amazing Australian chip brand called Grain Waves that Tony and I fell in love with when we visited last year. We had every intention of bringing home Australian wine and chips, but we kept drinking and eating them both after each purchase. Oops.

Wine + chips = the perfect late night snack.

It’s Milly’s 1st birthday today! I know I probably shouldn’t be this excited but my love for her is strong, as demonstrated by my snapchats.

Over the past year, she’s really developed her own little personality and it turns out, she’s just as quirky as me. Her daily life includes naps, treats, tail chasing and sitting on the refrigerator watching me cook. To be honest, the daily joy she’s given me is irreplaceable. It’s weird, but now I can’t imagine what my days would be be like without her. #CATMOMFOREVER

I’m in the midst of looking for a new apartment in Chicago, mostly because I’d like to have an office instead of working in my dining room on a daily basis.

Personally I find that moving is one of the most unenjoyable things. I mean, I still haven’t completely unpacked my suitcase from three weeks ago. I KNOW I’m totally that type of person. How annoying. I should really just go in there and unpack RIGHT NOW… but then I remember I’m traveling for the rest of the week and all of my problems are solved.
