Happy holidays friends! Currently I’m on my honeymoon in one of my favorite places on earth: Australia! We left on the 16th and arrive on the morning of the 18th in Sydney. LONGEST FLIGHT EVER but worth it.

Our travel plans consist of Sydney, Brisbane, Cairns, Daintree rainforest, wineries, Byron Bay and a few other stops along the way — we certainly have an amazing two week itinerary here before we leave for Hawaii for another week. We’re thrilled to be able to spend this time together as newlyweds and I can’t wait to share all of the details with you. And of course, all of our wedding photos!

This weekend was LOVELY and I hope yours was similar.

On Friday, we stayed in and watched the movie Moneyball. I hadn’t seen it before but fell in love with the storyline.

Saturday was a busy day for us as many of you already know that we’re leaving this coming weekend for our honeymoon! I’ll be gone for 3 WEEKS in Australia & Hawaii so Tony and I spent A LOT of time doing research, booking hotels, and trying to figure out how we were going to make the most of our time there. Finally later Saturday evening we ventured out into the tundra for ice skating at the Park at Wrigley. If you haven’t been and live in Chicago, I highly recommend it (they have hot cocoa and food there too).

I’m laying on our couch watching Tony eat a huge plate of my latest creation: vegan tofu nachos (recipe comin’ soon). The best part is that he has no idea that I made them with a healthy cheese sauce made from nuts, or that the ‘meat’ is actually tofu. This is exactly why I love doing what I do: I love helping people eat healthier and more nutritious without sacrificing taste.

And sometimes you need a cookie that’s the best of both worlds: both sweet and a little more nutritious.
