I have a small confession to make: Hot Chocolate is one of my weaknesses. When cold and windy, snow-dusted evenings come along, I’m all about a giant cup of hot chocolate topped with a fresh pile of that real-deal whipped cream. In fact, the more whipped cream, the better.

I remember drinking Swiss Miss growing up. The kind with the weird after-taste and the fake mini-marshmallows. It was weird, indeed. I topped mine with extra Reddi-wip and zero regrets. Little did I know that making your own rich and creamy hot chocolate could be easier than you ever imagined.

Are you ready for some pumpkin?! I’ve been waiting for it like a kid on Christmas morning. And I guess you really don’t have a choice because here I am shoving this recipe in your face. There’s no turning back now: Pumpkin season has officially started on Ambitious Kitchen.

In fact, did you know that my love for pumpkin is right up top with my love for all things nut butter? I’ve always said that if I could choose my last meal on earth, it would be pumpkin pie with whipped cream. Does that make me a basic bitch?

My first memories of waffles are the ones from the local breakfast spot on Sundays after church. They were gigantic, crispy on the outside and topped with real whipped cream. A true breakfast indulgence that’s especially wonderful when you’re a kid.

Now that I’m older, my eating habits have changed somewhat. I mostly seek recipes that that fill me up with fiber, protein and healthy fats. Typically I go for a hearty breakfast of eggs, turkey bacon, a banana and any kind of nut butter I can find in my cupboard. However, there are days when I get cravings for a waffle the size of my face and just have to give in.

This Summer has been remarkable.

To tell you the truth, I thought I’d have more down time to relax but then I realize that life is short and all I want to do is see the world like any twenty-something. I spent a lot of time traveling without any regrets. The discovery of new places always excites me and I couldn’t feel any more blessed to celebrate the end of Summer with a happy heart.

In other exciting end of Summer news, Tony should be getting home from baseball next week, so we’ll be spending time together eating everything that Chicago has to offer. Date nights (and BDUBS) here we come!

It’s Milly’s 1st birthday today! I know I probably shouldn’t be this excited but my love for her is strong, as demonstrated by my snapchats.

Over the past year, she’s really developed her own little personality and it turns out, she’s just as quirky as me. Her daily life includes naps, treats, tail chasing and sitting on the refrigerator watching me cook. To be honest, the daily joy she’s given me is irreplaceable. It’s weird, but now I can’t imagine what my days would be be like without her. #CATMOMFOREVER

Today, I’m giving you a recipe for cookies made with real, simple, natural HEALTHY ingredients. SO many basic adjectives, so much cookie goodness.

This is for all of my nutella lovers; I know who you are. Well not exactly, but I do know what it’s like to have a nut butter obsession. The kind that makes it difficult to buy a jar because you can’t stop at one spoonful, or two, or even four. I need a NBSG (nut butter support group).

If you haven’t noticed, I’ve been on a little bit of a baking hiatus. It’s not that I haven’t baking, because Instagram knows I have.

It’s just that ever since I made a commitment to follow the #SummerSWEATseries workouts and some of the meal plans, I’ve made a conscious effort about the amount of sugar and sweet treats I’ve been putting into my body. When I do indulge it’s usually a spoonful or two of vanilla almond butter or some dessert chia protein bars that I’ve been making (coming soon!). But lately brownies have been on my mind; you all know that usually I’m obsessed with cookies but I’ve been craving chocolate like no other.

Some people can’t control themselves when it comes to chocolate but my problem happens to lie with nut butters. Every time I make them or buy a jar I down that creamy goodness in about 5 days. FOR REALS.

I usually just spoon it right out of the jar and into my mouth. Seriously cannot help it. I’ve actually thought about starting my own nut butter company. You never know.

Things I’ve done lately:

1. Tried going vegan for 3 days. Didn’t work because I love eggs for breakfast.

2. Tried going paleo for a day. But then I ate a pita and some hummus.

3. Chugged almond milk from the carton and scarfed down one of these muffins slathered in almond butter right before bed. I think I can probably stick with this one.
