While munching on one of these blondies the other night in front of the TV, I thought about how much I’m learning to love relaxing with a sweet treat and an episode of whatever I’m feeling. Serious statement. I really haven’t been into TV shows since Dawson’s Creek and Felicity.

At this point, I think I can admit to you that I’m terrible at relaxing. I don’t like to do it and in general, makes me feel bored. I have this rationale in my mind that tells me TV is a waste of time and that I could be doing a million other things with my time that’s both productive and satisfying.

Happy Monday, friends! How was your weekend? Tony and I chilled hard — it was something we had been craving due to our busy schedules with virtually no down time. Now that certainly doesn’t mean our weekend was uneventful (we still had things to talk about regarding the house), but we were able to get donuts at Dinkel’s, shop at Paulina’s meat market, make Jamaican Jerk chicken kabobs, walk 20,000 steps and clean our apartment.

Not to mention that we’ve started the process of getting rid of things. Including all the various food ingredients I have sitting in my cupboard.

Hello and welcome to stressville. Our house offer was accepted this weekend and we’re in the midst of coordinating inspections, lawyer fees and contracts. I’m really excited though and for the most part I’ve been handling it like I normally would aka baking all the things and forgetting all about my real world responsibilities.

Anyway, while I’m off in la la land (and possibly taking a few days off from blogging), I wanted to give you a recipe for HEALTHY fudge. It’s real, dreamy and also tastes like the real deal. Plus only 4 ingredients are involved!

How much can you fall in love with a food? Because I’ve fallen into a deep dark love affair with this chocolate avocado pudding pie.

I know, I know. Sounds weird, right? But at this point I feel like you all know me well enough that if I put a peculiar ingredient in something and tell you it’s amazing, you know I’m speaking the truth. The proof? Black bean avocado brownies. Chickpea chocolate chip cookies. Chickpea blondies. Black bean truffles. Lentil blondies.

Reese’s Peanut Butter Cups were always my favorite candy as a kid. Classic case of nostalgia.

During Halloween I’d go through my bag and pick out all Reese’s and set them aside for extra special treat days. I had to savor them because Mom didn’t buy Reese’s often. When Easter came along and Reese’s eggs were popular, I was allowed to have exactly one. I cherished that Reese’s egg with my entire soul.

Meet my favorite new brownie. Trust me, it’s an important introduction. It’s kind of like when you meet your soulmate and want to make sure your friends all approve. This brownie situation is similar; I really, really hope you all approve. How could you not? They’re freaking fantastic fudgy almond flour brownies! Too many f words?

When was the last time you had a brownie anyway? I’m talking about a rich, fudgy brownie that talks to sweetly your soul and warms your heart with love. One that you need a big glass of milk for.

Those are exactly these kind of brownies.

If you lived with me, you’d know that I almost always have to end each meal (or the night) with a little something sweet. I have a feeling that we’re very similar in our fondness for better-for-you treats, am I right?!

All I know is that I can’t feel confident and slam down an extra large blizzard or cherry dipped cone all the time.

I’m also sensing that I might be craving DQ here. Haven’t had a Dilly in wayyyy too long.

Almond meal banana muffins!!! Yes, we’ll get to the recipe, but first, hi and how was your weekend?

Here in Chicago it was a beautiful 60 degrees (in February!). Of course, I took full advantage of the weekend by taking a break from work and taxes. On Friday night we stayed in, made cookies and watched the new(er) Steve Jobs movie. I full blown LOVED it and thought Michael Fassbender was fantastic. If you haven’t seen it yet, you must!
