How’s your fridge looking these days? Overflowing with bright berries & fresh seasonal produce? Mine is packed to the brim.I mean seriously guys, when you have an obsession with buying all the fruit on sale from Peapod, finding room in the fridge becomes a real problem. Flavors just seem to dance around in my head all day and the next thing I know, I’ve got more than just a few grocery bags to unload.

So what’s a girl to do? Well, sometimes it’s just necessary to throw everything in a blender and enjoy a refreshing smoothie. Often, the random ingredients create the most delicious flavors. Case in point: this watermelon smoothie packed with cherries, berries & creamy almond milk.

Happy Monday! I’m coming at you full force with some of my favorite healthy DIY snack mixes in partnership with my friends at Blue Diamond Almonds, who is the Official Snack Nut of the Team USA Swimming! This time I’m back sharing a few of my favorite go-to healthier snack mixes that help me to feel inspired, energized and follow my “Lane to Greatness“.

If you know me well, you’d know that nothing excites me more than a good snack. From energy bites to toast with all the toppings, I’m always making something different because a girl’s gotta have her options. Am I right?

I think I’ve said this before, but if I don’t have a snack every 2 to 3 hours, I get absolutely the WORST kind of hangry. I can’t speak or think; all that’s dancing through my head is food. GIANT FOOD DANCING TELLING ME TO COME AND GET IT.

While munching on one of these blondies the other night in front of the TV, I thought about how much I’m learning to love relaxing with a sweet treat and an episode of whatever I’m feeling. Serious statement. I really haven’t been into TV shows since Dawson’s Creek and Felicity.

At this point, I think I can admit to you that I’m terrible at relaxing. I don’t like to do it and in general, makes me feel bored. I have this rationale in my mind that tells me TV is a waste of time and that I could be doing a million other things with my time that’s both productive and satisfying.

I have to say, we had a very exciting weekend because…

We put an offer down on a house! It’s in Chicago and is what I would call a refinished vintage gem. We’re waiting to hear if our offer is accepted so please cross your fingers for us! We should find out later today or tomorrow.

Bread is back baby. That’s right, we’re toasting it up, then throwing on ALL the toppings on today’s Wellness Wednesday in partnership with my wonderful friends over at Blue Diamond.

I don’t know about you, but morning toast happens to be one of my absolute favorite ways to enjoy a quick, nutritious breakfast. Over the past few years, bread has gotten a bad rap mostly due to people experimenting with gluten or grain free diets. Today I’m making a claim that bread (or toast) is back and ready to be enjoyed again!

So, why do I love bread so much? It’s easy to throw in the toaster making it a quick on-the-go breakfast. Of course I’ve been through my peanut butter, almond butter & avocado toast phase, but today we’re moving on to bigger and better toppings. Toppings that are as beautiful as they are delicious to eat. Toppings that you may have never thought to put on your toast…

Tony got me a wonderful ice cream maker for my birthday last December and I finally put it to good use with this absolutely amazing vegan wild blueberry lavender coconut ice cream.

The first time I ever had lavender ice cream was at Jeni’s here in Chicago. It was a marvelous wildberry lavender flavor that was bright purple, sweet, floral and uber creamy. Probably one of my favorite ice creams that I’ve ever had. During the summertime, fruity ice creams are where it’s at.
