As you guys know I’ve been representing Under Armour Women this year as one of their 7 ambassadors. It has been an incredible journey, and I’m so lucky to be part of this awesome group of women. UA Women are all about inspiring each other, including the next generation of all the ladies out there.

Today I’m taking you inside… my UA shoe closet. I’ve accumulated some awesome gear from them, but the shoes have to be some of my FAVORITES. Most of you know that I run, do yoga, cycle, lift, dance and pretty everything in between that keeps me active, so I need shoes that will work no matter what I’m doing.

OHHHH hi! I’ve been teasing this beautiful recipe for a while now on Instagram stories and I couldn’t be more excited to finally share one of my favorite comfort foods in the entire world: my mom’s Puerto Rican Rice and Beans.

As many of you know, my mom is full Puerto Rican, as are my grandparents. My childhood dinner’s were often full of hispanic cuisine — often empanadas, rice and beans, tostones, pazole and ALL THE GOOD THINGS IN LIFE. More recently, I’ve connected with recipes that are from my heritage and started cooking from the soul again. Personally, it feels incredibly rewarding when Puerto Rican soul food fills my home with it’s intoxicating, aromatic spices.

And even if you aren’t Puerto Rican, why not try something new?! We could all use a good dose of global inspired creativity and cooking in our lives. These rice and beans are the perfect way to start.

I’m sitting here early morning drinking my morning coffee and relaxing to the music of Oh Wonder. I love how the sun is just starting to peek out over the trees and that yes, it’s feeling like Fall might just be in the air. In fact, the crisp air took my breath away when I opened our patio door this morning; I was a little shocked by how chilly it got overnight. I suppose it’s finally time to turn off the AC, open all the windows and soak up the last few weeks of summer.

Hi guys! We’re back with the last episode of the wellness series in partnership with Under Armour Women.

I spent last weekend at a retreat in Santa Barbara working on personal and business goals at the Big Soul Retreat that Under Armour so graciously sponsored me for. I had been wanting to go on a soul searching type of retreat for quite sometime and so when this one popped up on my radar, I knew it was time to do it. And it’s perfect because today we are talking about what’s next for Ambitious Kitchen.

Wellness Series Episode 4: What's next for Ambitious Kitchen

First off, the retreat offered me exactly what I needed: a chance to explore my fears and wants, yoga daily, plant based meals, and a destination away from the chaos that is often my daily life.

Because the truth is, over the past year and a half or so, I’ve been overwhelmed with the level of stress in my life. It’s not something I talk about often, but it frequents my days and weeks like you wouldn’t believe. Where does the stress come, you might ask? Buying a house, getting married and running two businesses and the pressure I put on myself to always being DOING.

However the truth is, I should be less hard on myself. I really do have my dream job. I have a life that I’m really proud of. And more than anything I’m so incredibly grateful to have a community of people who make my recipes on a regular basis. I wish I could give you all a big hug.

Sometimes when you’re always on the go, you forget to say thank you to yourself for all the hard work you’ve put in along the way. You forget to tell yourself how proud you are and acknowledge what it took to get where you are. We’ve all got our own unique journeys and I’m SO incredibly blessed to be on mine.

While I really don’t know what’s next for Ambitious Kitchen, I’d like to think that a cookbook is on the radar and potentially going back to school for nutrition. We’ll see. All I know is that I can’t thank you enough for being here.

Homemade roasted tomato basil soup with garlic, olive oil and caramelized onions. Delicious, flavorful and the best way to use up garden tomatoes! You’ll never want to go back to the canned stuff after you try this.

When I was younger, I despised tomato soup. The flavors never seemed to call for me, nor did I ever crave grilled cheese. My favorite was Mom’s chunky beef stew that simmered and bubbled on the stovetop for hours in our small yellow duplex kitchen back in Minneapolis. It wasn’t until high school that I began to crave the comfort of creamy tomato soup after Mom started buying Progresso’s hearty tomato.

I used to be really good about eating veggies at every meal but sometimes eggs and avocado toast call my name and then I eat chocolate for dessert and call it a day.

Tony and I watched the Chicago Air & Water show from our rooftop, cleaned our house (necessary and a little therapeutic), went to a BBQ with some friends, ate donuts and walked at least 12,000 steps each day. Oh and of course, watched a little Game of Thrones. Sunday traditions are my favorite. What are yours?

Hi guys! Happy weekend. Grab your cup of coffee, it’s going to be a long one!

This past week: Oh my goodness it has been a WEEK. I just got back from a trip to Maine to learn more about wild blueberries. Unfortunately during my time there, I somehow came into contact with a terrible case of food poisoning from food at a restaurant. On Tuesday, I was stuck in my hotel room all day and night feeling like death. This was the first time I’ve ever had food poisoning, but can 100% say I never want to have it again. Such a bummer when that happens, especially while traveling!

The good news is I’m finally feeling better and ready to actually enjoy food again aka ready to bake my heart out, swing my cart around Trader Joe’s like a maniac, and crush kombucha like it’s my job. You know how I do.
