Slow cooker Thai peanut chicken served over a scrumptious sticky coconut purple rice. Healthy, easy to make and perfect for meal prep or a weeknight dinner. This is a dish you’ll make again and again!

Our new home is in a diverse, wonderful area of Chicago with a variety of ethnic, chic restaurants. From Mexican and Thai, to Ethiopian and burger joints, our neighborhood boasts some of the most unique food in the city. A few weeks ago, Tony and I decided to try a new Thai restaurant that always seemed to be bustling with people, even during the weeknights.

When we arrived we were overwhelmed by over 250 items on the menu, but also the aroma of flavors enticing us to order everything. As we were seated, I noticed other customers slurping up broth from big steaming bowls of pho with thick noodles; you could even smell the green onions they garnished across the top of the soup. Immediately, Tony and I could tell that this place would become our neighborhood favorite. A gem of sorts.

That being said, I want to thank you all for being patient with me. I know I’ve been posting less frequently, but promise I still have plenty of delicious goodies coming to you… like these healthy apple muffins!

Imagine fudgy paleo brownies made with pumpkin, maple syrup, coconut flour and almond flour! These easy, healthy brownies are the ultimate fall treat.

A big hello from Minneapolis, MN! I’m here working on a BIG BIG BIG project that’s set to launch January 2017. I don’t think I could have a busier next few months, between decorating our new home, redoing my personal blog, launching a new project, client work AND finishing up my cookbook proposal, I am feeling THE HEAT. However, I’m incredibly happy that I have a boyfriend who loves and supports what I do.

Brown Butter Chocolate Chip Cookies with dark brown sugar, two types of chocolate chips and a sprinkle of sea salt. These are, in fact, the BEST cookies you will ever eat.

Let’s flash back to around 2012 when I was off trying to perfect the absolute best chocolate chip cookie. I was living in Washington D.C. at the time and my entire world outside of work included baking my heart out. It took me months and months to find an accurate and delicious ratio between butter (it had to be browned), brown sugar (a higher ration than white sugar) and of course, chocolate (two types of chips!).

A few weeks ago I got invited to the Stitch Fix HQ in San Francisco for few days of learning the ins and outs of the company, touring the warehouse and a full day of fashion, hair, makeup and photoshoots! Many of you who’ve been AK readers for years, know that I’ve been doing Stitch Fix for about 3 years and even used to do reviews on the blog. So when I got in invite, it was a dream come true!

P.S. If you haven’t tried Stitch Fix you totally should. Just sign up, fill out a style profile and you are on your way. You’ll get 5 pieces in a box that’s delivered straight to your front door. The cost? Just a $20 styling fee. You’re not required to keep any of the pieces that were sent either. Simply place the items in the return bag and mail it back within 3 days. Pretty sweet, right?!

This weekend should be a good one! We’re heading to Austin, TX to check out Austin City Limits, a music festival. Tony and I are wicked excited because Mumford and Sons will be there, and if any of you have ever heard Marcus Mumford sing, then you know he is the ultimate man. We actually fell in love with their new album and so if you haven’t checked it out yet, I highly recommend.

Also if you have anything I absolutely must eat in Austin or hiking places, please let me know!

Call this Wellness Wednesday a throwback one. To the deep dark days of my life where food was everything and nothing. Over the past few years, I’ve talked a lot on the blog about how my eating disorder affected myself, relationships and choices. It’s not an easy thing to share, however now that I know that many of you have struggled with disordered eating, I feel more confident to share my experience.

Even if you haven’t battled an eating disorder, this might be worth the read, simply for a little insight as to how devastating it can be.

Chai spices make this almond hazelnut butter recipe taste like your favorite chai tea latte. Spread it on toast, fruit or stuff it in sweet potatoes for the ultimate treat.

Every night when I go to bed I think about food combinations. I’m not joking. Pairing food combinations together eventually lull me into a beautiful sleep. In fact ever since we got our bed from Helix, I’ve been sleeping like a true angel!

I’m back from San Francisco filled with inspiration and feel good energy! Sorry about being late on this post again — I stayed up way too late and passed out with my computer on my lap before I could finish the post. I’m feeling stressed out of my mind and all I want to do is eat a burger and fries. Obviously I need to crush that craving this weekend so I stop thinking about it.

Butternut squash and kale salad that’s both beautiful and flavorful! Tossed with pomegranate, toasted sliced almonds, goat cheese and a light dressing!

Well, here we are! It is officially fall.

I woke up the other morning and noticed a handful of golden yellow leaves falling to the ground. Do you remember collecting those when you were younger? I do. Anyway, the morning air has been brisk and wonderful. I’ve been opening our sunroom windows and letting in the afternoon breeze while I work on editing photo for the blog.
