I freaking love chili. How about you? To me, it’s just always so comforting, warm, filling and hearty. YUMMMMMM.
Lately I’ve been on a real chili making binge. Can’t stop, won’t stop. I cooked up two batches last week and froze one for evenings when I don’t feel like cooking or simply don’t have the time. Sometimes I work out in the evenings and by the time I get back home my desire to start chopping vegetables and doing dishes is negative 1 million.
This weekend flew by, didn’t it? I spent both Friday and Saturday doing recipe development in preparation for when I’m gone on vacation next week. So excited to bring you LOTS more healthy meal recipes that are naturally gluten free. You’ll see them here soon!
In the meantime, I thought I’d get you started on some of my favorite recipes on AK plus other blogger’s gluten free recipes. I hope you find a few that you enjoy.
I’m happy to report that the New Year has completely re-energized me in terms of working out, healthy eating, and thinking about the blog. So many recipe ideas are swirling around my head that I literally have to stop myself from going to the grocery store more than once per day.
In other news, Tony and I are headed to Cancun next week for a little vacation. Thanks for your recommendations on where to go while we’re there. I’ve been to Cancun multiple times but mostly just end up sitting around my hotel drinking and eating all day. Although, isn’t that what vacations are kinda for?
So I’m doing a juice & food cleanse right now. I’m SUPER excited about it because as you may already know I freakin’ love doing them. It’s not that I think they’re great in the moment, it’s just that I really love how I feel afterwards. The benefits? How clear my skin looks, how much great sleep I get and how differently I end up thinking about food.
I’ll have updates for you on the cleanse soon; in the meantime I’ve been staring at these bars on the counter all of yesterday. I made them last week for Tony because he’s all like I need to get in shape for baseball season — this is as he continues to eat chocolate covered doughnuts for breakfast. I think he could eat just about anything and still look good. No joke.
So, it seems that Wellness Wednesdays don’t necessarily mean only talking about food, weight loss and exercise. It’s also talking about our lives and how we live them. I’m not trying to get all ‘woo-woo’ on you, but in reality we do only have one life to live, so why not try and make it the best possible given our own unique circumstances?
I’ve officially been blogging for 3 1/2 years now. I remember when I first started out I didn’t know what I was doing, only that I wanted to share my creations with other people who loved food just as much as I do. Now years later, I feel like I’m focused, more passionate, knowledgeable and creative then I ever was before.
2014 was a huge milestone personally and professionally; I can’t thank you enough for being here reading along as this blog continues to change and grow.
I know today is supposed to be Wellness Wednesday, but I’m taking a small break until the New Year. No worries — I’ll be back next week with a new WW post; I know I’ve been away for a while! I’m guessing we all probably have. This year is such a wonderful time to just kick up your feet, read a new book, and just enjoy family time. And basically every cookie in sight.
That being said, I’ve done my fair share of eating, drinking, and cooking. Tony’s birthday was last week and I had the pleasure of making him a version of King Arthur Flour’s deep dish pizza, then homemade French Silk Pie for dessert. Swear to goodness, it was the best meal I’ve ever made him. The pie was perfect. I really feel awful about not posting the recipe, but it also seems a bit wrong to throw you a dessert full of butter, cream and chocolate when we’re all trying to eat healthy again. I haven’t made recipes for the blog in about a week. Basically I enjoy relaxing over the holiday break, spending time with loved ones, eating delicious food and really enjoy myself before I make a list of all the things I want to do next year.
Of course I need to stay in touch with all of you, so I thought that I’d share the most viewed recipes on Ambitious Kitchen over the past year. Most of them are tried and true favorites that everyone really loves to make over and over again; if you haven’t made any on the list, I suggest you try them out!
