the filling tastes like a cinnamon roll, then they’re topped with a cinnamon icing. pretty sure you NEED to make these!⠀

For the dough:⠀
1 package Simple Mills artisan bread mix⠀
4 tablespoons melted butter (or vegan butter)
1 egg⠀
2.5 tablespoons unsweetened almond milk⠀
⠀
For the filling:⠀
⅓ cup packed organic brown sugar (or sub coconut sugar)⠀
2 teaspoons cinnamon
1 tablespoon butter, melted (or sub vegan butter)⠀
⠀
For the egg wash:⠀
1 egg + 1 teaspoon water⠀
⠀
For the icing:⠀
1/3 cup powdered sugar⠀
1-2 teaspoons almond milk, to thin⠀
1/4 teaspoon vanilla extract⠀
¼ teaspoon cinnamon⠀
⠀
Add bread mix, melted butter, egg and almond milk to the bowl of a food processor and pulse until a dough forms. You can also mix in a bowl if you prefer. Form dough into a disc and place in a stasher bag or wrap in plastic and chill for 30 min.
Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper. Set aside.⠀
Make the filling by combining brown sugar, cinnamon and butter in a bowl; set aside.⠀
Roll out the dough between two sheets of parchment paper so that it’s 1/8th inch thick. Use a 3-inch round cookie dough cutter, or the lid of a small mason jar and cut out 18 rounds. Use a spatula to transfer 9 of the rounds to the baking sheet. Add ½ tablespoon of the brown sugar cinnamon mixture to the middle of each round, leaving a small edge so you can seal them up.⠀
In a medium bowl, whisk together egg + water for the egg wash. Use a pastry brush to brush the outside of the dough edges with egg wash. Place remaining dough rounds on top and use a fork to seal/crimp edges shut.⠀
Brush the tops of each cookie with egg wash. Bake for 15 minutes. Allow pies to cool completely before icing.⠀
Make icing by mixing together the powdered sugar, milk, cinnamon and vanilla together in a bowl. Add ½ teaspoon-1 teaspoon icing on each cookie. Enjoy! Makes 9 pies.

I admit, the overall change was difficult, but being alone to process and prepare for the journey to motherhood was essential. I needed the time to learn how to really advocate and take care of me first.

and now I can honestly say that I don’t fear birth or what’s to come, I look forward to it.

because the woman I used to be is not the woman I will be. I can feel the experience, the courage, the change, the beautiful beginning that’s coming. and can now honestly say that I’m ready.
