Buffalo Tuna Melt Stuffed Peppers

STEP 1

Start by roasting your bell pepper halves with a tiny bit of olive oil until slightly fork tender

STEP 2

While they bake, mix your tuna, diced celery, shredded carrots, green onion, greek yogurt, buffalo sauce & dijon mustard

Don't forget salt & pepper to taste!

STEP 3

Evenly divide the tuna mixture into your pepper halves, then sprinkle with cheese & bake

STEP 4

Sprinkle with fresh cilantro, scallions and more buffalo sauce if you'd like, then serve!
