One Pan Caribbean Jerk Chicken with Pineapple-Coconut Rice

STEP 1

Add chicken to a bowl with olive oil, soy sauce, apple cider vinegar, garlic, ginger & lime juice 

STEP 2

Add honey, allspice, cinnamon, thyme and cayenne pepper

STEP 3

Mix well and let the chicken marinate for at least 30 minutes

STEP 4

Cook chicken for 4-5 on each side until browned, then remove from the skillet

STEP 5

In the same skillet saute green onion & red bell pepper, then stir in coconut milk and rice

STEP 6

Fold in pineapple, add the chicken back to the skillet, cover and simmer for 20 minutes

STEP 7

Garnish the skillet meal with green onion and serve

Serve immediately or add to meal prep containers and enjoy for days!
