The Best Chicken Soup You'll Ever Eat

STEP 1

Chop up your carrot, celery & onion, and add olive oil to a large pot over medium heat

STEP 2

Add your garlic & veggies and saute for a few minutes

STEP 3

Add in freshly grated ginger and turmeric

STEP 4

Stir everything together and then add in your chicken thighs

STEP 5

Pour in all of your low sodium chicken broth

STEP 6

Add fresh rosemary and thyme

STEP 7

Finish with salt & pepper, stir and bring the soup to a boil

STEP 8

Fold in the couscous and bring the soup down to a simmer

STEP 9

When the chicken is done, remove it from the pot, shred it & add it back to the pot

Pour into bowls and enjoy!
